    Homemade Energy Bites

    Got a recipe from a co-worker and I sort of revamped it -

    1 cup Oats
    Flaxseed
    Coconut Flakes
    1/3 cup+/- Honey
    Peanut Butter
    Nutella

    I put the oats, flaxseed and coconut in a food processor, then mixed the rest together, put in the refrigerator for about a 1/2 hour, then rolled into balls. Should keep in the refrigerator about a week(they won't last that long for me. I usually just eyeball measurements, next time I'll try chocolate chips, maybe a little protein powder.

    Anyone have any homemade energy bar recipes or any other suggestions to add???

    Can you guesstimate the amounts of pb and nutella? - these sound wonderful! We're on the road a lot, and it sounds like I could make these in a hotel room and they'll keep a while.
    For 3 days, I get to part of a thousand other journeys.

    Probably about a 1/2 cup of each - peanut butter and nutella. I didn't have any chocolate chips, but 2 jars of Nutella. I love peanut butter and might add a little more next time.

    Those sound great!!! I'm vegan, so I can't have Nutella anymore (don't even get me started on how bummed that makes me), but I will try it with almond butter and Justin's chocolate hazelnut butter. I wonder if I can partially dehydrate them so I can take them on long bike rides without as much melting.
    I use roasted buckwheat in the homemade granola I make- so I might try putting some of that in. Woot! I can't wait to try these!
