Yoghurt with a spoonful of honey?
I have almost no chocolate, cookies or ice cream in the house, and basically never salty snacks.
I just started on the South Beach diet :eek: and here's a dessert that tastes great and is very satisfying.

Vanilla Ricotta Crème
Serves 1
Ingredients:
1⁄2 cup part-skim ricotta cheese
1⁄4 teaspoon vanilla extract
1 package sugar substitute ( <-- I'd use half a package, at most )
Instructions:
Mix together the ricotta, vanilla extract, and sugar substitute in a dessert bowl. Serve chilled.
Nutritional Information:
178 calories
10 total fat (6 g sat)
38 mg cholesterol
7 g carbohydrate
14 g protein
0 g fiber
155 mg sodium

You can vary it by adding a bit of cocoa power and instant espresso, or almond extract - use your imagination.

PS How does cheese factor into the SB diet?
Because Jo can barely squeeze into her formerly very baggy pants and is developing rolls in her midsection. And her underwear is getting tight!!!

PS Cookies brings the thread back on track. I usually have homemade chocolate chip cookies in the freezer. I thaw one a day as my treat.
I either go get some ice cream (on my bike) or I go brush my teeth.
Actually, a piece of fruit usually does it for me. Especially strawberries (or any kind of berries, even frozen ones--with a bit of vanilla yogurt)
i like celery with a bit of low fat peanut butter and raisins...
If you're going to have dessert, might as well slow down and enjoy it.

Sometimes just a low fat, light yogurt is good.
Also -- frozen chocolate covered raisins.
Pike Place TEA... nummy orange spice stuff. Naturally sweet.
I'm of the belief that if you're going to have it, make it at least worth it!
BTW... my scale is stuck, so I may not be the person to take advice from!:o
Some yummy variations on the South Beach ricotta creme:
lemon juice or extract with a litttle grated lemon zest
espresso powder with mini-chocolate chips on top
almond extract with a few sliced or chopped almonds on top
You can make a non-dairy version with silken tofu.
i've heard frozen grapes are really good...
Is an hour too long? How about rice pudding? I usually have all the ingredients, so I make it when I have that desperate need for sugar.
1qt milk
1/2c uncooked rice
1/2 sugar
1 egg
1t vanilla extract
raisins (optional)
Bring milk to boil, add sugar and rice. Turn heat to low. Add 1/2c of the hot milk to the egg (while beating) to prevent it from curdling, then add that mixture to the pot. Simmer on low heat for 1 hour, stirring occasionally. Stir in vanilla and raisins, if you're using them. Pour into a quart size container (it will thicken as it cools).
Oh I love rice pudding! and bread pudding as well.
I do bread pudding with whole grain wheat bread, soy or skim milk and lots of cinnamon and spices. It's practically health food!
Frozen grapes are good. I eat them alot. I also love bread pudding. That's something I have maybe once a year. Here is a recipe for a Rustic Chocolate-Cinnamon Bread Pudding
1/2 cup (1/2 of 8-oz. tub) Light Cream Cheese Spread
1/2 cup firmly packed brown sugar
2 large egg whites
1/2 tsp. ground cinnamon
1-3/4 cups fat-free milk
6 cups cubed whole wheat bread (6 to 8 slices)
2 squares Semi-Sweet Chocolate, coarsely chopped
PREHEAT oven to 350°F. Beat cream cheese spread and sugar in large bowl with electric mixer on medium speed until well blended. Add egg whites and cinnamon; mix well. Gradually add milk, mixing until well blended.
PLACE bread cubes in 8-inch square glass baking dish. Sprinkle chocolate over bread. Pour cream cheese spread mixture over bread mixture in dish.
BAKE 30 to 35 min. or until set in center. Cool slightly; serve warm. Store leftover pudding in refrigerator.

½ c. Plain Greek Yogurt (full fat version!)
1 t. organic dark chocolate chips
3-4 walnut halves crushed
Drizzle of honey
Your welcome Jes, I think :p. I got the recipe from coolwhip.com. It is in the Healthy Living recipes. I'm seriously debating on making some very soon. I've never made rice pudding. I might mess that up.

So that forces me to have real dessert only when I step outside of home.
The local raspberries are lush and plentiful right now.
Here's one of my favorite recipes for apples. I love apples, but sometimes I buy too many and they aren't as crisp as I would like to eat them as-is. This is great for dessert or breakfast (or dinner, even).
It's called clafoutis, and you can also make it with cherries (or peaches, I would think). It's from Normandy.
Note, I don't use measurements here, I just do it on the fly. Sorry if you need measurements...
ingredients:
apples
flour
milk (soy milk is good, too)
eggs
salt
butter
sugar
cinnamon
vanilla extract
1. cut and peel the apples
2. saute apples in skillet (cast iron is good, because it'll need to go in the oven) with a little butter and cinnamon until tender
3. meanwhile, make the batter: eggs, milk, flour, a pinch of sugar, vanilla extract, a pinch of salt. The batter should be a little thicker than heavy cream.
4. when the apples have finished sauteing, pour the batter over them and put the skillet in a pre-heated oven (I've found 375 to be good, but see what works for you)
5. bake it until puffy and golden on top.
6. Serve with yogurt, maple syrup, or just plain.
great for breakfast the next day, too.

mix all into a bowl, pop in the microwave and voila! creamy choco peanut butter crunch goodness. mmmm.... :)

Bananas and plain greek yogurt in a blender! So simple, so amazing! Also fresh or frozen (thawed) raspberries with vanilla ice cream or greek yogurt.
very thinly sliced fresh pineapple covered with mint sugar (fresh mint leaves mashed with sugar)
A handful of Ghiradelli dark chocolate chips (with a glass of milk).
To one blender, add:
a cup of soy milk
a cup of frozen berries
a scoop or two of your favorite protein powder (if its chocolate flavored, all the better!)
Mix well, pour into a glass, enjoy!

Ingredients:
• 1 Cup Almonds (peeled and grinded)
• 1-1/2 Cup Condensed milk
• 1 Cup Whipped cream
• 1/4 tsp Powdered cardamom
• 1/2 Cup Pistachios (chopped)
• Pinch of Saffron
How to make Almond Kulfi:
• Mix all the ingredients except pista and saffron in a large bowl.
• Beat the mixture for about 2-5 minutes to make it soft.
• Now put this mixture in a conical mould.
• Sprinkle it with chopped pistachios and saffron.
• Keep it for freezing for about 8 to 10 hours.
• Almond Kulfi is ready.:D
