The shredding disk on my food processor just doesn't work. I hadn't thought about a cheese grater, thanks! Also glad to hear you liked the recipe. It is good and also good for non-Paleo events :)

I hear you Crankin! That is frustrating for sure.
I weighed 125.7 this morning, my workout schedule for the rest of the week is a bit different as far as timing is concerned, I might take that but we will see. I prefer to have a rest day before weighing in but I may not be able to do that.

I know ... it is so hard to do that! It really is one of the few things I've not set aside in my efforts to adopt a more Paleo/primal lifestyle. I think part of me is afraid that if I stop watching the scales those almost 100 pounds I've worked so hard to lose will start running back. The ironic part is I KNOW other things are going on with my body that the scales can't measure. I've dropped more sizes since July than my loss of 9-10 pounds explains - it is about far more than numbers on a scale.

Today:
B: ground beef and veggie frittata
40 min training session that featured fun with kettlebells
s: boiled egg and small banana
L: Roasted chicken , kale and apple/ sweet potato hash
S: nuts. too many of them :o
D: See breakfast add blueberries for dessert

Yesterday
B: Last of the ground beef veggie casserole
L: Tuna salad with lettuce wrap
S: banana
Short bike ride :D
D: Sauteed shrimp/veggies with jicama "home fries" first time I have made or eaten jicama and missed the part where it said to slow-cook the jicama first. Still good and cooked with Parsley.

I like garlic :D I only made a small squash so I cut the garlic in half. I didn't have pecans so I used what nuts I had. Very tasty and a different way to make squash and to get some good carbs into my diet.
