Can't remember the brand but it's just a reduced fat margarine type spread so it doesn't melt well.
I love garlic but I'd never do that to a sweet pea!
Tonight - parmesan crusted roasted chicken and new potatoes roasted with garlic and rosemary.

Tonight - grilled chicken thighs (marinated in lemon/olive oil marinade, parsley, and whatever other fresh herbs I have in the garden); green beans; sliced tomato, cucumber, red onion salad with vinagrette.
Maybe some ice cream for dessert? Or, maybe not? Just depends if I want to eat too much or not!

I'm probably going to spell all of this wrong, but last night my husband and I decided to go get Indian food at this vegetarian/vegan place and it was delicious... And to think I didn't like Indian food until a year ago!
We had Potatoe Pakora's, Paratha, Pulao Rice, and for desert we had peanut chew candy bars... mmm mmm!
It's Monday. I am having my ultrameal shake while everyone else is having misc leftovers,
DH: hamburger, corn on the cob, baked beans (from yesterdays cookout)
DS: tomato soup with noodles and veggies (from Saturdays dinner)
DD: I dunno. Probably a variety plate of cut up veggies, apple slices with PB, graham crackers.
Spoke, your dinner tonight sounds a lot like our dinner last night: grilled chicken quarters, skin removed, marinated in olive oil with garlic, toasted cumin and fresh-squeezed juices of lemon, lime and clementine; grilled asparagus and sliced tomato topped with a drizzle of olive oil, a little s&p and a basil leaf each. Dessert was dark chocolate gelato.
Tonight is an experiment. I am cutting up a bunch of fresh from the market tomatoes (mine are only little green things right now) and sautéing in olive oil and garlic, mixing in some chopped basil (which IS straight from my garden) and tossing with pappardelle pasta, ricotta and a little left-over spinach that I have on hand.
with the exception of the non-vegetarian stuff - this thread is like food porn :D
Baked some chicken breasts last night. I think I'm having salad tonight...walnuts, goat or feta cheese, half a chicken breast and spring mix. Maybe some cherry tomatoes if they look good. I'll pick up some fruit too.

Cheezy Chicken Cups
2 Tubes refrigerated Biscuits pressed flat and put in muffin cups filled with the following mixture:
1 can cream of chicken soup
1/2 bag frozen peas and carrots
Chopped cooked chicken
1/2 C shredded cheddar cheese
Bake 350 degrees for 20-25 minutes.
For the parents, salad :)
I'm home alone this week, so tonight I treated myself to wild salmon, marinated in lime juice, soy sauce, honey, and canola oil, accompanied by a salad with romaine, grape tomatoes, shaved parmesan, olive oil and balsamic vinegar, and a sweet potato. I just finished it with 2 squares of Trader Joe's dark chocolate.

Salad it was. Quarter of a chicken breast marinated in EVOO, honey, herbs de Provence, S&P for a little over a day (oops!), crumbled feta and walnuts over several handfuls of spring mix. The marinade for the chicken could have used a little extra salt if I were serving it on its own, but with the feta to add salt, it was pretty good. Just enough sweetness to make you go "what's that?" I added a few torn-up basil leaves (from the store; mine isn't happy at the moment) to the salad as well.
I'm torn about dessert. Ice cream, or a square or two of chocolate?
Big bowl of red grapes and a hunk of Gorgonzola cheese.

Tonight's dinner was spaghetti with vegan meatballs and vegan parmesan, garlic and rosemary bread with olive oil and vinegar to dip, and I'm currently making some whole wheat blueberry muffins, that I will probably have for desert!
Last night we grilled salmon burgers and topped them with the avocado basil dressing I made last week. I made a spinach salad with strawberries, red onion and goat cheese.

Two nights ago we had sauteed sliced radishes, smothered kale and mushrooms, roasted rosemary new potatoes and grilled turkey tenderloin. The radishes, kale and rosemary came from our garden. :)
Tonight we'll be doing leftover portuguese kale soup and fresh baked bread with a side of steamed broccoli (also from the garden).
And we've got fresh grown strawberries coming out our ears - we can barely eat them fast enough! They will be our desert every night and my snack during the day (with greek yogurt) for likely the rest of the summer!

I'm going to be staying near Renton, WA next month with a bunch of vegans, so we'll have to check out Pabla's.
Tonight I'll have my latest hot weather favorite: hummus and tabouli and romaine on low carb whole wheat tortillas.
bunny ninja, here is the recipe by Mark Bittman:
1 avocado
1/2 cup fresh basil leaves
1 clove garlic
Juice of one or more limes
1/4 cup olive oil
Salt and freshly ground pepper.
Put all ingredients in a mini food processor or blender and purée until smooth; add a few drops of water if you like a thinner dressing. Yield: About 1 cup.
That is when I turn to my trusty supply of Cliff bars - when the local Performance Bike store opened they had a deal for some time where you could buy one box and get one free. I stocked up for the season - little did I know how handy they can be when I am too tired/busy to go shopping :eek:

Steamed broccoli with Parmesean, olives stuffed with garlic and jalepenos, gorgonzola, and Reisling.
Don't have anyone to cook for but me right now. And I'm so busy cleaning my house that I really don't want to cook.
Procrastinator's Steamed Broccoli
Open a bag of pre-cut broccoli from Costco
Rinse in a desultory fashion
Pile into a steamer basket in a lidded pot, with 1-2 inches of water
Bring to a boil
Immediately turn off heat and leave until ready to have dinner (10-20 minutes)
Pasta tossed with sauteed asparagus (fresh bought from Yakima yesterday!) and garlic and a bit of romano cheese. Fresh bread that I made today (got the 5 min bread book out of the library - wowee that recipe works well!!) Some tossed greens - from my own little garden. I think there's red and green oak leaf, a bit of ordinary green leaf, mache, something that might be radicchio and some funky red spotted stuff. Maybe a bit of wine.
So I was bad and made homemade tortilla chips...fried, not baked. Half the batch got a sprinkling of salt. The other half got cinnamon sugar. I ate all but four of the salted ones for dinner with a cilantro pesto/chutney hybrid thing...
Not dinner - but it will be dinner! I had it for lunch. I came home early to 'work' from home and made a decent dish
Garlic, pepper, salt, baby shiitake, eggplant, plum tomatoes, zucchini, baby spinach, shiritake noodles, and some goat cheese crumbles... all sauteed up in the wok in olive oil.
Getting take out Indian to bring over to my cycling friends, who are leaving in 2 days for Bermuda. This trip is a replacement for them missing out on Spain, because of Brant's broken hip/crash. He is planning to test the hip out outside on the bike when they get back. It's been a long time since March 17th, although he has been on the trainer religiously and walking.
I know we will be having chicken mango and lamb rogan josh, but i m sure there will be more!
Chicken burrito: quarter of a chicken breast (marinated appropriately, though a dry rub would have worked better, I think), spring mix, a bit of grated cheddar, leftover cilantro goo from last night and chipotle salsa, wrapped in a flour tortilla.
Peach and chicken kabobs on top of a salad with pine nuts and prosciutto and a homemade peach vinaigrette.
Still haven't had any apple pie.
