Dirty corn chowder? Chicken tidbits? And the peavines?
Let's see tonight is a real toss up, I am tired of cookinf so maybe take out?
My stepfather is visiting with his friend (he and my mom have been divorced for the last 20+ years), and last night we made a special dinner. It was so good! We had steak Delmonico from our local beef farm down the road 6 miles, with a horseradish salsa that was wonderful. The wine was a St. Emilion--mmmm. We also grilled asparagus and had whole wheat couscous. Then we had fresh fruit salad for dessert. There were four of us and we had a nice dinner, good conversation and a beautiful sunset.
I'm trying a new recipe tonight - Chicken and Sweet Potato Stew. It's cooking in the crockpot right now.
Yesterday he did buffalo meat marinated in soy sauce, maple syrup, lemon juice, water, ginger root and some herbs. meat had a dollop of melted goat cheese. Then with the marinade during cooking sauce, he threw in Dijon mustard, abit of red wine, orange juice, balsamic vinegar, a few fresh cranberries.
The latter part was truly creative gesture of his. It was delish...with roasted asparagus on side and wine goblet of local gooseberry wine.
Yes a home meal!!! :):):)
Now tonight I have to match this with...homemade focaccia with smoked salmon, onion, garlic, capers and dijon mustard, topped with fresh dill. dough will be divided in half for dessert focaccia....with studded with fresh grapes, grated ginger root, crushed aniseed, cinnamon, cardamon, nutmeg. I will add leftover lumps of goat cheese. It too, has been a creative endeavour. Hopefully it works...I've never used bread flour before. Always all-purpose.
Brocolli and asparagus quiche. I added some hollandaise sauce to the milk when mixing up the custard, and it came out pretty good.
I love it when I wing it completely and it doesn't come out awful! :D
This was really good!

Tonight my husband and I had Chicken & Sausage Jambalaya. For dessert it was my favorite: Buttermilk Banana Bars!!!
Snapdragon.. that sounds wonderful! I've been looking for a good slow-cooker recipe. I'll have to try that. I LOVE sweet potatoes.
We had fresh caught halibut from the waters of the Puget Sound! Caught on my DH's pole, but it had been borrowed by a friend! DH spent all day yesterday trying to get some king salmon, but came home with only a sunburn.
Mmmm Mmmm good -- grilled with a soy-ginger marinade. WW pasta with asparagus and cherry tomatoes. Bread on the side. Should have had wine, but I just woke up from two nights of work... it's still a little early for me! Just water tonight.
Shrimp and leek quiche, side salad of spring greens with local strawberries, raspberry vinigrette dressing. Washed down with a glass of sangria. The shrimpies were local too
It is politically incorrect to buy imported shrimp or crawfish in this part of the country. Besides, ours taste better. :p
Ok we had last night for dinner marinated Ahi tuna, lemon pepper (fresh) pasta, and snow pea's (from farmers market) and for dessert my dh had homemade keylime pie and I had homemade lemon/keylime sorbet with waffle cookies!

I am SO coming to your house for dinner!!! :p
What is Dirty Corn Chowder????
Snapdragon - thanks for sharing your recipe - I lover sweet potatoes.
We had Subway - Grilled Chicken/Bacon/Ranch sandwich.
Frozen chicken pot pie. I know. Pathetic. But I did get in a 18 mile ride between work and dinner, and used up my "cooking" time so it had to be something quick. :(
Chicken Out 1/4 white with cabo spices, brown rice, cranberry salad
Tonite we had curried basa fillets (fish) w stir fried cauliflower (w garlic and sesame). For desert we had plain yogurt flavored with unsweentened cocoa powder and stevia (how I get my chocolate fix with no added sugar).
leftover potato salad and popcorn:p
man, i need to some grocery shopping
blackened cajun chicken with salad, accompanied by crispy kale chips and followed with organic chocolate (Dagoba Mon Cherri - dark chocolate, berries and vanilla). Yum.
A tin of sardines. A bowl of buckwheat noodles, soy cheese on crackers.
You're right. A bit unhealthy.
I'm trying to convince myself to attend a work-related BBQ tomorrow evening at the worksite..where there will be even more calorie laden food.
For lunch yesterday I had a 600 calorie Symphony chocolate bar - :o woops!
That brought my total calories to 1500 at 1:00pm.
Dinner was, therefore, a salad with vinegar dressing. Had some serious calorie compensation to do!
It was worth it! :D
Ok let's see last night we had Soba noodle's with tofu, snap pea's,red bell's, mushrooms, cabbage with a peanut sauce. For dessert same as the night before. Dh had keylime pie I had keylime sorbet. Oh then around 9:00 we both had a nature's gate pop tart!
Tonight is fiesta night at my friends house. I am bringing enchilada casserole. Made with ground turkey (don't do ground beef) refried beans, enchilida sauce and tortillas.
This early evening was outdoor barbecue at workplace..which is at a construction site. There were over 80 other employees...all half-shivering in near freezing temperatures outdoors in a food tent out in a parking lot. It was catered.
So this time tonight, I chowed down: 2 grilled chicken breasts, 2 grilled sausages with Dijon mustard on the side, 1/2 red small potato salad, some Greek salad, baby pickles, abit of bread, fresh cut fruit and hot coffee.
Then buzzed from this industrial workplace...to near home, where I had gelato (chocolate, mango and pineapple choices) with my partner. Already it was 8:00 pm.
Afterwards my body was ready to crash from high blood sugar. Next time..I will be better.
Bowl of rice, raw sugar snap peas, and halibut. Nothing fancy for the halibut. Just a tiny dash each of salt and pepper, and grilled on both sides in a cast iron skillet w/ a TBSP of olive oil, and finished off in the oven to cook through. Nice crispy crust on the outside, tender and buttery on the inside. Yummy! BTW, the cast iron skillet finally has a nice coating on it, so the fish hardly stuck at all.
Enchiladas, beans, guacamole, and a couple of Dos Equis! All served by a very nice waiter at our favorite restaurant. :D
