Kale in soup
1c yellow onion
1tbsp minced garlic (or more)
2c potatoes cut into one inch chunks
4-5c chicken or vegetable broth
1/2 c dry white wine (or more)
6c packed torn kale leaves
6c packed baby spinach leaves
1tsp red pepper flakes (or more)
Salt to taste
Sautéed garlic and onion in large stock pot, add broth, potatoes, and wine. Bring to a boil, cover pot and simmer 8 min. Add kale, simmer 8-10 min. Add spinach, pepper flakes. Simmer 5 min. Transfer cooked soup in batches into blender and purée until smooth.
Top each portion with bacon bits and a little parmigiano-reggiano grated on top.

This is easily one of the best soup recipes I’ve had. Thank you so much for sharing this.
I made one minor modification for personal preferences. Instead of adding a little Parmigian-Reggiano on top, I added on small dollop of non-fat plain yogurt to the pot just to give it a smoother texture.
