I used to try recipes from 101cookbooks.com all the time, but I was the only person that ever even tasted them. So I stopped trying after I had my second kid, too busy to make food no one would eat. But, with yet another holiday party with sloppy joes, cheesie potatoes, and chili cheese dip--I HAD to come up with some alternative :)

I made Roasted Pumpkin Salad (http://www.101cookbooks.com/archives/roasted-pumpkin-salad-recipe.html). I used Butternut Squash instead of pumpkin. I also made some honey roasted walnuts and tossed them in. It was SO GOOD. And no one tried it at the party, so I had plenty of left-overs for myself :D

Yum, that does sound good, and I've got plenty of butternut squash from my garden. I'll have to try that soon - thanks!

That sounds great! I would have eaten it all, and you'd have no leftovers. ;)

Looks like a great, yummy dish. One day hopefully someone will have it besides you, it is a healthy one.

I stir fry smallish cubes (maybe 2'' or less in size. I don't measure..) of butternut squash with onions, garlic and fresh, minced/smashed ginger root. Throw in some soy sauce. Even a dab of chili paste at beginning with onions (then squash about 5 min.)

Even less ingredients. Add abit of water to keep from burning on stove. No sugar/honey required because the cooking carmelizes the squash just a touch to bring out natural sweetness.

My mother's creation that I grew up and still use recipe today.
You can add sliced red peppers or sliced mushrooms for additional ingredients.

With rice on side, there's no need for any other dish for supper. :)

(Hmmm...maybe I better showcase this one day in my blog..shortly after talking about bison? )

It looks pretty tasty. DBF won't eat squash except in pie form, though. :(

That looks delicious! We just had butternut squash curry soup tonight ourselves. I'm getting really into orange foods this season. :D And they're so good for you!

This sounds delicous, I'm going to have to make it.

I have a biscotti recipe that uses olive oil instead of butter if anyone is interested. It's very good. :)
