    Coconut, Pineapple & other stuff

    I'm doing my best to eliminate gunk from my diet & am doing well so far .

    I purchased a nice coconut yesterday & would like to make a shake with it..What goes well with coconut milk?

    Also, a nice pineapple ventured into my basket & am searching for cool recipes.

    A bit more info..I'm in the process of eliminating Gluten & dairy from my diet (Dairy just goes through me)....Why you ask..I have been doing some reading/listening & found the following info...

    I think CC is trying to eat healthy.

    So make sure it's a health portion of rum and some icecubes to make a nice frosty beverage.

    I'm enjoying fresh apricots, blueberries, raspberries right now.

    Back to CC's question. How about with some yogurt? Oh, never mind, that's a dairy. But I like pina collada yogurt.

    If you have an ice cream freezer, coconut makes AMAZING ice cream. Add some fruit purée, matcha powder or concentrated brewed green tea, and a bit of simple syrup or honey. You could do a virgin piña colada ice cream!

    But I forget ... it's not necessarily ice cream season where you are.

    hmm

    I'm not a fan of rum but i do like gin...Ice cream's not really my thing...I could be tempted to eat something funky though!

    I want to add plums n peaches but they're not in season here in Australia...I had some yummy ones when we were on holiday in NZ the other week...mmm...

    I've rediscovered Nashi Pears..mmmmmm...mmmmm...
