    Summer veggie recipes

    Our CSA is sending us home with more leafy greens and veggies than we know what to do with. We're getting bored with eating them the same way every week (salads, stir fry, in pasta, steamed or sauteed w/ lemon and garlic). Any ideas or interesting websites? My husband prefers meat with his veggies and I could go either way.

    Chopped bitter greens like rappini are great in risotto, maybe with some white beans or pinto beans. Most recipes call for blanching the greens first to lose some of the "green" flavor, but I just throw them in once the rice is mostly cooked (after I take the top off the pressure cooker, usually).

    Milder greens are nice in quiche/frittata sort of egg custards.

    I always have greens in lentil soup - but don't fix a lot of that in hot weather.

    We love spicy food and beans too. Like I said, the DH wants more meat dishes than I do and won't eat the greens if they are too bitter.

    I'm definitely going to try the zucchini pancakes from the other veggie thread.

    The things we have the most of: Collard greens, chard, kale and salad greens.

    We also pick up cabbage, summer squash and zucchini this week.

    Zucchini bread!

    I like kale in soups (sausage, kale and white bean soup!), but it's a little warm for that. There are a number of Indian dishes that use spinach, but you might be able to substitute other mild greens and adjust the cooking times.

    Yeah - saag/palak paneer/tofu is nice because you can purée the greens or leave them chopped, vary the seasonings which are pretty basic as Indian food goes, make it with or without tomatoes, and obviously use either paneer or tofu or I don't see why you couldn't use tempeh.


    And I don't see why getting rid of zucchini should be limited to food ... how about a gin and tonic with a twist of zucchini?
