I use Canola oil.
1/2 cup oil
1/2 cup honey
1 Tbsp vanilla
Heat in large heavy pot (I use cast-iron dutch oven) until thin. Then stir in, in order:
1/2 tsp salt
1/2 cup sesame seeds
1 cup sunflower seeds
1 cup wheat germ
8 cups rolled oats (not quick or instant)
When all ingredients are coated with the oil-honey mixture, place pot in oven and turn to 350F. Stir every 5 minutes (though you can wait 10 minutes in the beginning while the oven is heating) until toasted.
You can replace the sesame seeds, sunflower seeds, and wheat germ with anything you want, like almonds or pecans or soy protein or coconut. Dried fruit or pre-toasted nuts can be added after the granola cools.
Oil is good, grease is better.
