Celery root, kohl rabi and apple mash that substituted for mashed potatoes, was lovely accompaniment to sauteed bison with saskatoon berry, ginger root, garlic, onion red wine sauce last night. Bison was quite lean which is why we do have this particular meat. Otherwise it would have been seafood.
Plus raddichico encasing a tomato bruschetta with a vinegarette. We also had a roasted red beet, orange and fennel bulb salad. OUr pre-Christmas meal and a bottle of ice wine that we forgot we bought a few years ago.
What was probably the decadent dish for our multi-course home annual dinner, was his hazelnut shortbread tart holding a rhubarb,blueberry and raspberry compote. He made this base from his mother's recipe, a legacy of her famed wonderful Christmas German baking.
Then we plan to do some short snowshoeing in the Rockies with our belongings to hotel after getting off bus.
