    recipes for the trail?

    Do you have a favorite recipe that you'd like to share--something that keeps your tank topped off for the trail?

    I found this on www.recipegoldmine.com:

    Chocolate-Peanut Butter Wraps recipe

    1/2 cup creamy peanut butter
    4 (8-inch) flour tortillas
    1 cup miniature marshmallows
    1/2 cup miniature semisweet chocolate chips

    Spread 2 tablespoons of peanut butter on each tortilla. Sprinkle 1/4 cup of marshmallows and 2 tablespoons of chocolate chips on half of each tortilla. Roll up, beginning with the topping side. Wrap each tortilla in heavy-duty foil; seal tightly.

    Margarita Peanut Trail Mix recipe

    1/3 cup peanut oil
    2 tablespoons lime juice or tequila
    1/4 teaspoon cayenne pepper (or to taste)
    3 tablespoons dry instant Margarita mix
    1 1/2 cups Spanish peanuts
    1 1/2 cups cocktail peanuts
    3 cups crisp corn cereal squares
    3 cups crisp rice cereal squares
    2 cups tiny cheese-flavored fish crackers
    1 cup sweetened dried cranberries
    Salt to taste

    Heat oven to 250 degrees F.

    Heat peanut oil in a large skillet. Stir in tequila of lime juice, cayenne pepper and margarita mix. Add peanuts, stirring until well coated.

    In a large roasting pan, combine remaining ingredients, except for dried cranberries. Stir in peanut mixture, mixing well. Bake one hour, stirring every 15 minutes.

    Remove from oven. Stir in dried cranberries. Add salt to taste. Spread on paper towels to cool. Store in an airtight container.

    Makes 12 cups (24 half-cup servings).

    Funny I was just thinking about this after watching a burger contest on Food Network.
    You make them and try them out.
    Sometimes what sounds like an odd combination is actually really good.

    I like to spread a tortilla with peanut butter, lay a peeled banana on it, roll it up and slice it. We call it Banana Sushi.

    Probably wouldn't go great on the trail, unless you didn't slice it.

    I do peanut butter + banana sandwiches that way all the time, except I don't slice it. If I'm riding without panniers I'll wrap it in a plastic bag and cable tie it to my top tube to snack on later.

    Reminds me of when I dated Elvis.
    He liked them fried, though.

    PB & N sammiches and honey
    Cut the sammich in 1/4's then freeze in a tupperware container.
    They'll be ready to eat during the ride.
