I use a Polar RCX5, which shows four lines. I have not raced yet, but I think for cyclocross, I would perhaps mainly care about elapsed time during the race, and take a gander at all the other stats afterward. But since I have to do at least four times, I will probably set it up for elapsed time, distance, speed, and...not sure about the last line. The new Garmin 920XT shows anticipated finish time, which I think is a nice feature (motivating or discouraging, depending on how you're doing).
I use a Garmin 500 when I race. But when I am racing, I don't look at it. One - it is too distracting to me (and I have 8 fields displayed so trying to find what I am looking for in a hypoxic state doesn't work), and two, I know it is typically a 40 minute race, but I go by lap count instead.
I analyze the data after the race when I download it to my computer/Strava.
