You can always dry it and use it for tea later - if you don't feel in the mood for that much tea now....

Put it in a concrete vault. Burn it. Bury it several miles deep. It will come back.
Lemonade with mint leaves. Had a pitcher in an Israeli restaurant, a very tart lemonade with a bunch of mint leaves. You could taste the mint. It was wonderful. Chopped mint in a fruit salad is also tasty.

throw some leaves in with hot chocolate- instant chocolate mint. I also have a mad lusting for chocolate mint black tea which I satisfy by brewing a pot of breakfast tea with mint and then stirring in some bittersweet chocolate bit til they melt. Yumm.
Mint jelly ( sugar water, boiled and muddled mint leaves and some pectin as necessary) would make a lovely easy home made christmas gift. Also if you like a traditional standing rib roast/roast beef which is our traditional Christmas Day dinner, equal parts heavy cream, pure horseradish (not horseradish sauce) and muccled mint make a bar none excellent sauce for the beef and potatoes.
Mint is a good soporific (sleep inducer) excellent for digestion and cleansing of breath, learn to graze on it.
if you ever plant mint in the ground, do so inside a clay pot with the lip sticking out about an inch to contain the runners and then prune it to a pencil stub on a regular basis.
It took over a bed at my parents' house; we ripped it out and replaced it with a trumpet vine (which subsequently took over the bed, much to the delight of the hummingbirds!). The few sprigs we saved to plant in a pot, though, haven't been doing well, of late.
Mine is confined in a pot, but I'd like to be able to see out of that window!
Thanks for the ideas! I think there may well be leg of lamb in the future. I don't know if I have quite enough to bother making tea with (besides, I have two boxes of the stuff lying around), but maybe some mint-infused sugar syrup?
There's a Thai beef salad with crispy rice and mint leaves that I LOVE to order.
Also you can chop mint leaves and toss them into any fruit salad. Nice with citrus especially!
Oh yeah, and in Thai spring rolls, just a few leaves so you can see them through the rice paper.Quote:

Amen to the grazing! I used to irrigate a hay field that was a huge mint field in a past life. Up by the water box that I had to clean out twice a day it was still growing everywhere. I'd grab a few leaves, nibble them a bit and then tuck them into my cheek while I moved the wheel line. It was awesome.Quote:
