I have been starving. Don't know why, but weight was at the low end today, so hence, the waffles.

18 mile ride
S: a few whole wheat pita rounds and cheese
D: went out to a local "fine dining" restaurant. We don't go to this place more than 2-3X a year, but we should go more. Had a bottle of red wine, cherry soup (delicious and no cream), and rack of lamb, but only 2 ribs of the lamb, the rest ground up and put in an empanada, with farm fresh squash. We split an ice cream sandwich dessert.
Got to ride a lot this weekend!
Yesterday: Rest day

Cherry soup? Interesting idea! I had to resist the lovely cherries at the store. Good price per pound but they were in 5 pound bags - a bit much for one person.
Friday

I was hardly hungry all day so I had to force myself to eat. I guess that's what happens when you spend the whole day on the couch!

S: 21 mile ride,one bottle of Nuun, a couple of whole wheat pita crackers and one piece of Machengo cheese when I got back
D: friends 50th birthday party: 2 glasses white wine, a few crackers and cheese, quarter of a rosemary crusted chicken breast, one lamb burger (no bun) on a tomato with yogurt/mint sauce, salad with wine vinegar, asparagus, slice of chocolate ice cream cake
Saturday

S: blueberries, macadamia nuts
D: steak, snow crab legs, grilled shrimp and mixed veggies
B: steel cut oats with a couple of almonds, a bit of PB, egg whites + 1 egg, skim milk & coffee
1hour 15 minute hard workout (it was for "fun" and was just wild). Apparently my hip flexor is happy with anything outside of running - not the slightest twinge otherwise :) Resisted the desire to take the equally hard advanced Bosu class afterwards...I doubt I really had the energy anyway - it was pretty intense.
S: small Muscle Milk drink
L: A bit of watermelon and a wrap that uses seasoned lamb/beef with a few tomatoes and tahini sauce - yummy! This was at a local middle eastern festival.
S: a bit less than 1/2 cup Blue Bell ice cream
D: sauteed cho fun? (looks like a small bok choy but a bit peppery, and I probably have the name wrong), with brown rice and chicken breast. Skim milk. One beer shortly

D: 3.5 lamb meatballs on a bed of zucchini "noodles," mint pesto, glass of red wine, 2 squares dark chocolate
This one was home made, from the Paleo cookbook. Basically, mint, walnuts, olive oil, and lemon juice. I used a smaller amount than the recipe and we still had some left over.
Sunday

D: salmon with hazelnut butter, garlic butter green beans, leftover butternut squash puree, 3 baked chicken wings, banana
I was an eating machine at dinner! I spent the entire day standing or walking and since I'm back to wearing the boot, I think I burned a lot more calories than normal. Plus, I was exhausted!

L: 1/4 pork chop, butter beans, 1 piece corn bread
S: 1 beer - 1 peach
D: 3 tacos with homemade shredded beef taco meat (lettuce, tomato, cheddar, salsa), small amount of beans and rice

S: I ate a Luna Bar all morning, munching away between 8:45 and noon. I was starving.
L: 2 veggie burger patties, cole slaw

D: one boneless chicken breast with mustard sauce, sweet potato, salad with cranberries, almonds, goat cheese, vinaigrette, glass of red wine
2 squares chocolate
I eat as many as I can, because I love cherries and I live alone, then take the ones left at the bottom of the bag and cook them down with a bit of almond extract, sugar (amount depends on how sweet the cherries were),a bit of lemon juice, some water to keep them from burning to the pan, and some cornstarch. (I maybe had 15 cherries in the last batch I made, so I didn't even bother to pit them and just fished the pits out as the fruits fell apart.) Instant sauce for ice cream or frozen yogurt. I imagine it would be good on Greek yogurt with some toasted almonds, but I haven't tried it yet.
Or I just pit them and freeze them for future use. Last time I made a cherry crisp out of them, but smoothies would be good too. (I don't own a cherry pitter, so I just used a paring knife and fingernails. The kitchen looked like I'd killed someone, but I had a lovely big bag of frozen cherries.)

L: 1 shredded beef taco
D: cornmeal mush, with sauteed turkey italian sausage crumbled up, onions, zucchini, small portobello mushrooms, tomatoes, and a snip of fresh thyme from my garden, sprinkle of parmesan cheese; glass of white wine
The cherry soup was awesome.
Monday

S: banana and a handful of mixed raw nuts
L: tuna and guacamole
D: burgers topped with guacamole, sweet potato oven fries, herbal tea
I had to eat the banana and nuts because I had to run an emergency errand at lunch and wouldn't get to eat until really late. It was not one of my better days - look at that gaping whole where veggies should be!!! :o
Yesterday:
B: usual steel-cut oats, mixed scramble (whole egg + 2 egg whites), skim and coffee
17 mile bike ride :) It was an easy ride, but awesome at 5:15 in the cool/dark of the morning!

Dinner: 1 chili relleno, 1/2 beef enchilada, rice beans and a wonderful margarita

L: beef/cabbage stir fry, nectarine
D: guacamole, ceviche, salsa - all with tortilla chips, and then a salad with lettuce, fajita steak, guac, pico de gallo.
45 minutes later: severe stomach cramping...I almost had to pull over! I will never eat tortilla chips again. Corn is officially removed from my diet in all forms for good.
Saturday

I had plans to test out dark chocolate but I was struck down with a cold germ yesterday afternoon and because of it, I was in bed by 8:30pm.

D: three slices of leftover pork tenderloin, some roasted veges, a small helping of vege risotto, 1 glass wine

Tuesday

test #2: 2.5 small squares of 77% cacao dark chocolate. It was really sweet to me, but delicious and I had zero digestive, mood, craving or sleep repercussions. Yay!
Today:

Yeah, I've had problems fitting veggies in recently for some reason - I HAVE them, just don't want to cook for some reason...
Our kitchen is temporarily out of commission as we have the ceilings repaired so things are a bit sketchy come dinner time. This morning, I had to eat breakfast and prep my lunch in the dark, too!

It's funny what meals you remember. Back in the summer of 1993, I went to NYC to see a college friend. She lived near Union Square Park and its fabulous farmers market. It was such a novelty to me then, as farmers markets--even in the liberal college town where I lived--were still a thing of the future. At the market one day, I bought some beautifully ripe tomotoes and a loaf of challah bread. The only thing I remember adding to it was a bit of spicy brown mustard. It was one of the best, most sublime, sandwiches ever.
