I had class tonight, so I ate at one of the 5 Japanese places that are on the bottom floor of the building... a cup of miso soup, a small piece of grilled salmon, salad, and a bit too much white rice.
Brewer is in the kitchen pretending to be a contestant on our favorite fantasy food tv show: Food Co-op Chef.
Because we never know what our co-op shares will contain there is no real planning. Kind of like 'Chopped' only their pantry is quite a bit more extensive than ours.
On our fantasy food show it is also important to use up all the things that will go over the soonest.
So we're having deconstructed stuffed peppers- because the peppers are all funky shapes- cauliflower, fresh garlic (from the coop), mushrooms, quinoa (from the pantry). Leftover duck.
Some kind of orange sauce was emerging when I came in here.

Tonight for dinner I had a huge bowl of steamed swiss chard fresh from the garden, with chunks of fresh mozzarella on top. A big cup of nettle and black cohash tea with honey.
making pizza with homemade part whole wheat dough right now - artichoke hearts, fresh mozzarella, grilled zucchini & eggplant on top (no sauce!) with a glass of nice Spanish red wine.
Swiss chard and pinto bean burritos.
Just had the leftover homemade gnocchi with gorgonzola sauce from last night. Tonight it will be pizza (also homemade), probably with anchovies.
That avocado-basil dressing looks fantastic. I'll be trying that soon.
Last night was grilled cheese (cheddar) on whole wheat with tomato-roasted red pepper soup and steamed broccoli. Tonight, no idea. Maybe chicken, maybe the rest of the soup...
Once a year I allow myself to eat fried seafood and today was my day. We did a group ride in Portsmouth NH and York Maine, which ended at a lovely seafood shack. I had a delicious, non-greasy scallop roll, along with about one quarter of my DH's onion rings. I know they were good, because usually, I would feel sick from this, but I was fine. In fact, fine enough to stop for soft serve ice cream on the way home!
This was a late lunch, at about 3:00. I am already hungry again and the ride wasn't even that hard. It looks like left over black bean soup and a tuna salad.
a smoothie. I have to go grocery shopping tomorrow for sure.
Portsmouth and York! Nice! I love cycling in that area.
Dinner turned out to be a chicken sandwich with a bit of Dijon mustard and cheddar with lots of steamed broccoli on the side, with garlic hummus to dip it in.
Ok, it is official - I need to come visit everyone's house for dinner because all of you are far better cooks than I am!
I had a sliced turkey sandwich, fat-free cottage cheese and strawberries. Actually the cottage cheese and strawberries came after my ride, the sandwich before my training session but those are just details :)
You're quite welcome to come over for dinner. It's boring just cooking for me. ;)
As proof of how much time I have on my hands, I made Indian rice pudding for breakfast. Leftovers will likely be dessert tonight and breakfast tomorrow, as I'm going home for a week. Yay!
Anyway, tonight's dinner is going to be the rest of the soup from Tuesday, probably with water crackers and goat cheese. I have some pickled broccoli stems going in the fridge (cinnamon+cardamom and garlic is an...interesting olfactory experience!), so I think they'll be the veggies!
I have not prepared any home-cooked meal for almost the past month. And won't be until 3 days later since I've been overseas and now visiting folks in Toronto.
Not even sure what place we will eat at for supper since it's holiday today, Canada Day with a number of closed restaurants.
But plan to have a dinner tonight somewhere at a restaurant with a sister I haven't seen for a year.
I need to go to the grocery store. Refrigerator raid produced: hummus with olives, heirloom cherry tomatoes, and watermelon. Had pita chips to go with the hummus.
I have a mad craving for gumbo with shrimp, and alligator andouille sausage. Just can't decide whether to make okra gumbo or file gumbo. :cool:
Yum! My family is having a big reunion this weekend in Acadia Parish. I'm not going because of cost and other travel...but I'm sure they will eat well and have a big ole' party. My father, stepmother, brother, niece and nephew will all be there. I've asked them to please have a big bowl of crawfish etouffee on my behalf.
I prefer gumbo made with okra, but that's just me.
My favorites are Bamboo Garden (my fave dishes are the Chicken Chow Mein, Chicken Fried Rice, Corn Chowder, and the Sweet N Sour Chicken Balls), Hillside Quickie (particularly the one in the U district - any sandwiches with Seitan are good, the Peanut Butter Cup Milkshake is the most amazing thing I've ever eaten, and the Mac N Cheese is delicious), Pizza Pi (also in the U district, but the other end, all vegan pizza place, my favorite is the "Hawaiian" Calzone, #4 I think. They also have the most amazing salads with "Chicken" strips, bleau cheese dressing, root bear floats, ice cream sundaes, apple-cinnamon pockets kind of like dessert calzones, etc. etc.), right across the street from them, and from the same owners as Pizza Pi is Wayward Cafe for the most amazing vegan breakfast you could imagine (think pancakes, sausage, tofu scramble, crepes, waffles, etc.), AND right across from them is the vegan grocery store! Cafe Flora is another good vegetarian gourmet place, with a few vegan options on Capitol Hill, I actually prefer it to Carmelita's (My favorite is the French Dip with au jus and sweet potato fries). I'm sure you could look up all these places online, along with their menus. There's a lot more, but those are the best of the best. Have fun!

Oh and I'm so excited, I don't know where else to post this, so I'll put it here... but my husband and I just joined our local CSA, and our first organic fruit and veggie bin is going to arrive on Tuesday! I can't wait to see what I get and try to figure out how to use it.
I finally actually cooked something other than baked chicken and steamed veggies :) For some reason I was hungry for soup - so I made some some of my never-the-same-twice refrigerator soup! This batch happened to have
Rainbow Chard, onion, cannellini beans, fire-roasted tomatoes, chicken, rice, and lots of spices
Yummy :) For dessert I had fresh Bing cherries :)
Even better, I made enough that I don't have to cook for awhile!
We smoked and grilled a pork shoulder. Yesterday I made BBQ sauce for it. The first step is turning 2 liters of root beer into a cup of syrup. :D
Pretty tasty stuff though.

Last night, I "volunteered" to make dinner, so we had pasta with vodka sauce and salad.
Tonight's dinner was fish cakes with avocado-tomatillo sauce, steamed broccoli and rice.
Tonight we are having salmon glazed in honey mustard w/ toasted almonds over basmati rice with a nice big salad.
Hm...I think dinner tonight may be peanut butter-sesame noodles with chicken. Veggies will either be peas or a salad.
After a 40-mile ride and next to no lunch - whatever I can lay my hands on :)
It looks like chicken, Basamati brown rice, and broccoli - and a small green-leaf salad. And a beer. :)
It's zucchini pasta with marinara sauce for us tonight...and fried chicken, corn on the cob and watermelon for the boys :)
Lamb chop, roasted brocolli drizzled with grapeseed oil, sweet corn on the cob. Sipping a lovely homemade (no mixes) margarita while it cooks.
Then back to the Girl with the Dragon Tatoo after.
Meat: Chicken breast dipped in a butter-lemon juice-spice mixture, then baked (I used garam masala with a touch of Madras curry powder for heat)
Carb: Corn salad. I used freshly roasted corn, half a seeded jalapeno, lots of cilantro, lime zest, part of a green onion, and garlic. Dressing consisted of melted butter with lime juice, cayenne pepper and cumin.
Veggie: Sauteed baby spinach with garlic
"Weird" side: half a baked-then-broiled peach with a balsamic glaze and a bit of blue cheese.
I think I'm doing the dishes, then getting out of the house for a while. It's hot, not aided by my doing all that cooking.
Cold tuna from the can, with olive oil and pickled capers.
After a long vacation, it's good to be back preparing one's own meals. And no it's not BBQ meal since BBQ's are forbidden on our condo balconies. ;)
Am making focaccia with sundried tomatoes, red peppers, onions, garlic and feta cheese.
Dessert focaccia with fresh blueberries, raspberries, sliced apricots drizzled with honey, spiced with cinnamon, fresh ginger root, cardamon, nutmeg, and crushed aniseed. It's mixed up creative. :)

Grilled chicken marinated in lemon, olive oil, and garlic that's served with a lemon-Dijon mustard sauce. I also made some green beans and roasted red potatoes from the local farmer's market.
Asiago bread, red pepper pesto, and a nice glass of Red Bicyclette Syrah.
Ooooh, I made a really healthy dinner tonight!

For dessert: NJ blueberries and non-fat yogurt.

I've been using the livestrong website to track my nutrient totals and when it came to dinner tonight I was nearly at a loss. Somehow I managed to exceed my sugar 'daily allowance' earlier in the day by eating a salad comprised mainly of roma tomatoes (after having raspberry jam at breakfast), and my fat intake was also slightly surpassed. I'm hellbent on keeping my fat and sugar under my daily allowance total so tonight for dinner I had 4 scrambled egg whites and lightly salted cucumber spears. booooring :rolleyes:

I had a baked chicken breast with stir-fry veggies and the beer from Saturday that I never got around to drinking. For a snack later I had some no-fat cottage cheese and an apple.
I made tofu pad thai with red and green peppers, yellow and green squash and carrots.
