Brown goat cheese sounds interesting. Don't think I've ever seen it in the US.
ETA: I just googled it and found "gjetost." Which apparently is available here. Sounds good and I shall look for it.

Ooooh, I have been obsessed with pita bread and homemade hummus, I am going to have to try adding avocados to it!

The only cheese I miss as a vegan is gjetost. So caramel-y and delicious.
My favorite sandwich right now is roasted veggies (eggplant, zucchini, mushrooms, sweet potatoes) with an olive tapenade all wrapped up in a warm baguette, tightly wrapped and eaten hours later when all the flavors have melded. It's the perfect picnic/hiking sandwich.

For some reason, I've had a craving for a Liverwurst, mustard, and sweet pickle sandwich. This was an old favorite of my mother's, God rest her soul.
I used to love fried egg sandwiches with tomatoes and lots of mayo.

but another "comfort sandwich" I love is fried bologna. basically you fry the bologna (just throw it on the pan) and put it on bread that has mayo and a bit of mustard.
There's a deli near where I work that makes a "California Tuna Sandwich." Tuna salad, swiss cheese, tomatoes, lettuce, avocado and sprouts on your choice of bread. I like it on a spinach wrap, hold the sprouts. I get it for lunch at least once a week.
