L: Leftover beef stew, 1 oatmeal raisin cookie
S: few spoonfuls of cottage cheese to finish off the tub
D: 1 chicken thigh baked with rice and mushrooms in the oven, green beans, 1 glass red wine

Rest day... I spent most of it doing my PT stretches
B: breakfast sandwich: one egg, low fat cheddar, 1.5 turkey sausages on a whole wheat spelt roll, an orange, blueberries, coffee
L: veggie and hummus whole wheat wrap, carrots
S: coffee, slice of Machengo, 2 whole wheat pita crackers
D: 3 slices flank steak, home made cowboy beans, broccoli

B: wg toast with peanut butter and cherry jam
L: leftover chicken with rice
D: hamburger with blue cheese, french fries, 1 beer (that was a splurge)

B: 2 waffles with walnuts, cranberries, 2 slices uncured bacon, blueberries, coffee
did a metric, during which I ate a Lara Bar during the first 35 miles and drank a bottle of Accelerade.
Lunch, during the ride was half of a large chicken honey mustartd wrap, infused with bacon crumbles and lettuce and half a bottle of Gatorade, poured the rest of the Gatorade into my bottle and drank that during the rest of the ride
S: got home, drank water and had 3 slices of Machengo and a few whole wheat pita chips, one left over pork-quinoa meatball. This was nothing compared to my normal post long ride eating!
D: we went out to a very nice Italian place in another suburb, for my birthday. It truly was like being in Italy. Had a glass of Prosecco and DH and I shared a tapas sized portion of burrata and something else... forget the Italian name, maybe arrancini. I had the small sized squash ravioli; 7 small raviolis, which were delicious and it was just the right amount. Tpped it off with a glass of red wine and an affogato for dessert. I was celebrating, after all.

today:

D: 5 Czech meatballs and cauliflower "mashed" potatoes, salad, 2 squares dark chocolate

Crankin, those Czech meatballs are wonderful, like meat candy :) looking forward to trying some of the new meatball spice blends in the new cookbook.
Still home sick but starting to feel, and eat, better.
B: small piece of frittata, single small coffee. 2 dried figs
L: bone broth with mushrooms, chicken and spinach.
S: Kefir with a bit of protein powder mixed in
D: last of the frittata and a small baked potato

D: Paleo Mulligatawny Stew over baby spinach sauteed with almond slivers (from Well Fed 2) scroll down for the recipe. This is the first time I've tried it. I am getting tired so am foregoing the cauliflower rice tonight, I will make that tomorrow night. I don't feel like having to clean my food processor tonight ;)
Added: OMG that stew is incredible! It is really more like soup because I didn't have any arrowroot powder and didn't feel up to heading out and hunting some down, but this is a great cool weather recipe! I bet it would also be great cooked with no poultry & paired with pulled pork. Or perhaps even used as a base for fish stew - fish stew curry anyone? hmmmmmm

Yes, the Czech meatballs are definitely like crack.

D: went out with a friend to a place where I can eat a meal similar to what I would make at home. Had blackened salmon, a sweet potato, green beans, with a garden salad, glass of red wine.

went on a 15.6 mile ride. Should not have had the second cup of coffee.

L: I went to a client's hosue to meet with the mom and she made me lunch; turkey and swiss with mustard on a roll. Not bad, but it was a white bread roll. 2 pickle slices, an apple
S: nuts, chocolate cranberries. then I was so hungry when I got home, I ate a Czech meatball and 2 whole wheat crackers
D: 2 chicken wings, half a sweet potato, salad, glass of red wine

Yesterday:
B: eggs scrambled with spinach, 1/4 avocado, coffee (down to 1 cup a day right now)
1 hour group training - this one was much lower in intensity - no crazy metabolic work. Unsure if that is what he had planned or if it is because I was there and he knows I've been ill. Followed with protein shake

I am looking forward to a bit more experimentation in the kitchen this weekend with my new cookbook:) And...I've re-gained the weight I lost last weekend when I was so sick - and I am NOT complaining about that.
