I've only tried rollers in a hallway where I had a wall on either side to grab if things went wrong.
I prefer my trainer, but my riding could probably use rollers to smoothen out my stroke.

As per workout suggestions... if you cannot use your hands, can you put some aerobars on your bike so that the weight is on your forearms/elbows and ride on a stationary trainer? That would allow you to get your bicycle training done if you like - without putting pressure on your hand and thumb...
