This thread is making me miss potatoes. (I'm allergic to raw potato juice, apparently. Makes prepping them hard.) :(
I like them peeled, boiled, then brushed with olive oil and garlic (lots of garlic!) and roasted.

Yummy. I've been getting some local new potatoes at the farmer's market. I just roast them with some olive oil, kosher salt and pepper until they're a little crispy. OMG; they're so good.
I've often thought about using them on rides, but I suppose I'd just rather have them for dinner!
I know what's for dinner tonight...........YUM!!!
What kind of wine with these potatoes??? :) Of course for the after party, not during the ride!
