The wind drowns out more car noise than the ear bud in my experience. I dont wear them if I am traveling in a well traffiked area, but in my neighborhood and the ones around it, I MIGHT have a car pass me 4 times max while I am out riding during the day - and they are going 30 mph.
Trust me - Im the most paranoid person in the world - If there is ANY chance that wearing the one bud would be dangerous, I dont do it.
I DO wear my MP3 player with both buds or use speakers if I am on the trainer.
I just wondered what other people listen to - not where they listen to it :)

I've been looking into headphone alternatives for biking, like speakers on the handlebars, or there's a backpack with speakers in the shoulder straps, or speakers in a helmet...another thing I may try is a cheap pair of behind the head earphones, just hooked around my neck, and not on my ears. Though I suspect the wind may drown that out.
As far as what I have on my iPod, I've got nearly 2500 songs, so too much to name. However, I do have an account at iTunesregistry.com that has my entire library listed on it here.

I've just upgraded my mp3 player from 128mb to a lovely new 20gb. I have over two thousand tracks on it, so too much to mention. :)

I have an Ipod shuffle, and mostly what I listen to is Podcasts! There are a ton of them about biking, and triathlon, and endurance sports, and anything else you can think of, in lengths ranging from 10 minutes to an hour. Sometimes on a really long ride I will get through all the Podcasts and then I have a bunch of music on there, too. To get them, you just go to ITunes, to the Podcast section, and do a search or browse. They're free. Then, if you like one, you subscribe to it, and it gets automatically updated- new shows are downloaded as they become available.
I ride with only the left earbud, and only on trails.
