After all this talk, I bought that cookbook today.
4 oz. almond milk, 2 dried apricots, handful of walnuts before 35 minutes of intervals on the trainer
B: 2 egg omelette with avocado, sprinkle of cheddar, salsa, an orange, coffee
L: 4 slices of ham rolled up with veggie cream cheese, cup of creamy tomato soup, bowl of blueberries and strawberries
S: 1/4 cup of nuts, cranberries, chocolate
D: 6 oz. filet mignon, Brussel sprouts, salad with lettuce, avocado, cranberries, goat cheese, 2 squares dark chocolate
Good choice Crankin, it is a great cookbook! It is also about cooking, not just recipes. I never thought about pre-cooking for the work week until I read her suggestions. With MY schedule it is the only way that I can get enough vegetables and any kind of variety in my diet.
B: usual frittata, bacon, coffee with cream
1 hour hard group workout, protein shake afterwards
L: arm pot roast with carrots, sweet potato, small salad
S: small roasted chicken thigh, a small amount of chard
D: sardines, sauteed red cabbage with onions and pear
I am thinking about trying this three-meat chili recipe this weekend as well - it looks good!
I wish I COULD workout on as little food as some here do - my body just won't let me do it. I cut back on my breakfast portions on days that know I will supplement my protein after my workout but I've still got to have a reasonable brekkie. It is a balance between having enough energy for the level of effort required but not TOO much that my stomach rebels during the workout.
B: 1 piece wg toast with butter, bowl of wheat chex with 1% milk, coffee
L: 1 bowl of chicken noodle soup
D: 2 chicken tacos, 1 beer

Thanks for the carnitas tips, GLC. I used my stainless steel stockpot and that was probably half of my problem. I'll try my dutch oven next time. At some point, I need to bite the bullet and buy a replacement for my small un-enameled dutch oven.
Just got my copy of Practical Paleo from the library. I think I'm going to like this cookbook enough to buy it. I've written out a huge list of things to make!

L: chocolate chili over spaghetti squash
S: pear
D: sardines, baby spinach with small amount home-made dressing, small baked sweet potato
Today:
B: scrambled eggs with spinach, 1 slice FRESH side-pork, coffee with cream
L: chocolate chili over baby spinach, tiny pear
D:??? perhaps a very different kind of chili that I still need to cook, or citrus carnitas - time will tell ;)
Catrin--Are you using fresh or canned sardines? And where do you find them? The local Kroger only has them packed in mustard sauce (uh...) or soybean oil. Do you do anything to them? I think there's an Indian recipe for almost a curry or spicy tomato sauce for sardines, but I'm a sucker for nearly anything in a spicy tomato sauce...

L: Inventory day at work means that management buys food! Half a chicken burrito from Chipotle, a handful or two of tortilla chips and a glass of Pepsi.
S: More chips and another glass of Pepsi.
D: The other half of the burrito
S: Hot chocolate with whipped cream.
Canned, and I don't do anything to them, I've not tried using them in a recipe. Both Trader Joe's and Whole Foods has different varieties packed in extra virgin olive oil, mustard, or tomato sauce. I won't touch canola oil in anything so I do have to watch out for that - TJ has more varities of small fish packed in canola oil than WF :( I also like herring. Whole Foods has canned trout but it is quite a bit more expensive so I've not tried it.
My dinner yesterday wound up being chicken salad made from a roasted chicken thigh and veggies over a bed of mixed salad greens. Yummm!

D: glass of red wine, turkey meatloaf with yellow pepper and onions, sautéed sweet potatoes, one square dark chocolate
B: 2 eggs, hashbrowns, coffee, toast with butter, strawberries
L: 1 piece chicken
Snack: 1 piece marble cake
Dinner: pork burrito, 1 margarita
