Today (rest day):
B: 2 poached eggs in chicken broth with mushrooms and spinach, 1 slice nitrate-free bacon, coffee with cream
S: KIND bar (+ protein version) while out doing errands that took FAR too long.
Very late lunch, or whatever (at 3pm): roasted chicken, salad with oak lettuce, carrots, snow peas, dressing with sesame seed oil and citrus vinegar.
Dinner will likely be quite late and will feature the last of the braised beef shanks and perhaps a spinach/strawberry salad.

Woke up yesterday and I had gained half a pound; not sure what is going on. Then, intense exercise during the day made me insanely hungry.

S: when I got home, I really tried to manage my hunger, but it was pretty hard. I had 2 small pieces of Machengo cheese, with black bean dip, 2 whole wheat pita rounds. Then about an hour later I had a piece of Ezekial bread
D: we went out, to a place that I could actually have decent food at, but I succumbed to the special. I had a glass of red wine, a green salad with oil and vinegar, a slice of fresh bread, half a duck, sweet potato, broccoli and cauliflower. Shared a slice of mint chocolate ice cream pie with DH...

S: slice of ham with cheese (at coffee hour after church)
Lunch/Dinner? (4:00 pm) Roast duck with coconut-almond green beans, coconut milk beverage. First time I've made it and it was nice and crispy :)
S: Will probably have a mid-evening snack of an apple and almond butter.

Dinner: salmon baked in oven with dill, olive oil and chardonnay, salad (red leaf lettuce, cucs, yellow and red bell peppers, avocado) vinaigrette with blue cheese crumbles and sunflower seeds, mixed rice pilaf
1 piece sees dark chocolate with nugget
Today:
B: 1 bowl of 8 grain hot cereal, 1/2 banana, 1% milk, coffee
L: will be 1 bowl of split pea soup and a piece of wg bread
D: Tacos or leftovers (don't know yet)

D: "Hot plate" made with pastured ground beef (cooked in garlic and onions) and bok choy with spices
On Sundays I've started something new - cook enough animal protein for at least 5 days, and steam-saute many different types of veggies and roast a squash or two, or sweet potatoes. The veggies aren't cooked all the way, just enough. Makes meal preparation much easier and quicker during the week and allows far more variety. My body needs more than protein and baby spinach or kale :) This is my first week with this new approach and it seems to be working well. I get home from work 3 hours before bed time so there just isn't much spare time to spend in the kitchen on weeknights. With the right mix of spices and veggies I create quite a variety of "hot plates" without a lot of work or expense.
