L: went out to lunch with DS, who is taking a week off at home... 2 poblano pepper and potato enchiladas, on corn tortillas, with some kind of green chili sauce. I ate the black beans and not the rice.

Saturday:
B: one egg, 3 slices ham, low fat cheddar on 2 slices Ezekial bread, an orange, coffee
I co-led a 38.5 mile ride at a very slow speed.
Lunch was in the middle of the ride, where I ate half of a cranberry-walnut chicken salad wrap and a packet of nuts and cranberries
S: Ate a Luna Bar at the end of the ride
D: went out with friends, where I ate a garden salad with oil and vinegar, whole wheat penne with marinara, and one meatball, and a very small piece of bread. 2 glasses of red wine, and a few bites of DH's chocolate cake dessert
Sunday:
B: everything bagel, light cream cheese, lox, an orange, coffee
half hour of run/walk intervals on the treadmill, totaling about 2.75 miles, including warm up and cool down
L: cup of sweet potato soup, salad with tuna, lettuce, grape tomatoes, a sprinkle of goat cheese
S: piece of Machengo cheese
D: tomato stuffed with curried chicken salad, blueberries, 2 squares dark chocolate, 2 dried apricots
Back to normal eating. I can't totally deprive myself on the weekends.

D: Large salad with grilled chicken breast, blue cheese crumbles and vinaigrette, 1 glass red wine

I won't even try to post what I ate this weekend, but I took my food and campstove with me so I didn't do badly at all outside of a bit too much beer...
Today:
B: eggs scrambled with mushrooms, chopped hubbard squash, beet greens, coffee with cream
1 hour workout
S: chicken thigh
L: eggs scrambled with chopped hubbard squash and spinach (before grocery shopping)
D: Planning to have beef liver, bacon & onions with bok-choy and perhaps roasted beets. Or hubbard squash as there is so much of it!
We will see how the liver goes, my first attempt, ever, to cook it.
Added: The liver wasn't bad! I cooked it with lots of onions and bacon. I don't see it becoming my favorite but I can eat it! That was beef liver, so will have to check out the less strongly flavored types. I burned incense while cooking it - but it didn't have a very strong smell or THAT strong of a taste. I wonder if it was actually from a calf rather than a full grown cow.

D: veal "meatloaf" and a salad, 2 squares dark chocolate, glass of red wine

B: Paleo pumpkin "pancakes", bacon, coffee with cream
L: roasted chicken thigh wrapped in 1 savory pumpkin pancake
1-hour bike ride :)
D: grass-fed beef chili, spaghetti squash and one egg poached in the chili - yummy! Spinach salad with walnuts and walnut oil dressing, 1 beer. 2 squares 88% dark chocolate.

S: slice of Ezekial raisin bread
L: 2 veggie burger patties, cole slaw, an orange
D: (restaurant) salmon tartare, a couple of bread crisps, skirt steak, I ate 2/3, and a huge chopped salad, 2 glasses of red wine, shared an apple cheese cake slice with DH, I ate about 1/4
Saturday:
2 egg omelette with turkey sausage slices, low fat cheddar, slice of Ezekial raisin bread, blueberries, 2 cups coffee
S: handful of almonds
L: 2 home made salmon burger patties, cole slaw, an apple
19.5 mile ride
S: a few ww pita chips, hummus
D: fennel turkey meatball soup with tomato, spinach, chicken broth, navy beans, whole wheat pasta, salad, 2 squares dark chocolate, glass of red wine

Yesterday:
B: Sausage/Veggie Frittata, coffee with cream
1 hour group training session with a vegan protein shake following (mixed with water)
L: "soup" made with beef bone broth, onions, carrots, kale, mustard greens, beef. Small mixed greens salad with a couple of walnuts, avocado and walnut oil for dressing
D: See lunch, minus the salad - I wasn't very hungry. 2 walnut halves and 2 squares of 88% dark chocolate for dessert

I've only been eating 2 meals a day for the last week.
Yesterday:
Skipped breakfast (woke up late), apart from a doughnut and a few pretzels at work.

"Dinner" at a Halloween party. 4 chicken wings, a few pieces of pickled asparagus, 2 cheddar-apple hand pies, a couple chips with salsa, a piece of cornbread, several stuffed dates, a few shrimp. 1 beer, 1 hard cider, a little wine.
Then the hosts (my adviser and his wife) insisted on loading me up with food. :rolleyes:
Today:
B: Tea, cereal
S: Piece of naan, 2 doughnut holes
S2: 1 cookie, a chicken wing
D: Pasta in a cream sauce (homemade!) with chicken sausage, Brussels sprouts.

I haven't been posting here, as I hate to be the only one posting. I've been eating much less, with DH away, until last night when I went to friends' house for dinner.
Saturday:
sandwich on a whole wheat bagel, with 2 slices low salt ham and a slice of low fat provolone, an orange
34 mile very hilly ride, during which I ate 2/3 of a Luna Bar, had a bottle of Nuun, and ate a baggie half full of nuts, cranberries, chocolate after the ride. Then I raked leaves for 2 hours :eek:.
L: 4 chicken slices, cole slaw, an apple
D: 1/4 lb Coho salmon, kale, salad with walnuts, cranberries, goat cheese, balsamic vinegar , glass of red wine
Sunday:
B: 2 eggs scrambled with a corn tortilla, kale, salsa, 2 slices of turkey bacon, an orange
ran 2 miles on the treadmill
L: chicken salad made with Greek yogurt, cranberries, almonds
D: went to friends' had one beer, one glass of wine. Haddock cooked in parchment with parsley/lemon, over brown rice, green beans, and a big salad. Ate a chocolate chip/blueberry square pastry for dessert

D: braised short ribs with remaining 6-7 baked sweet potato fries, chicken bone broth with carrots and mustard greens

D: chicken breast in balsamic vinegar, broccolini, sweet potato, 2 squares dark chocolate

D: (at a friends house) salad with lots of yummy veggies and a sliced chicken breast hot off the grill. 1 beer.

I wouldn't mind getting in an easy ride tonight, or some easy spinning on the trainer, we will see how my legs feel. If not tonight, then early tomorrow morning. My knee is FINALLY recovered and I can get back to riding YAYYYYYY!
Dinner tonight will likely be some combination of bone broth, beef (shank), and veggies.
