I doubt you're eating more than me...
Yesterday:
B: 4 egg white omelet with ham and swiss
MS: greek yogurt
L: 1/2 turkey + roasted veggie sandwich, salad w/ chicken
D: slow braised pork cheek with celeriac puree
ES: cutie clementine
B: 2 dried apricots and a handful of walnuts before strength and core class, broiled red pepper with tuna stuffed inside, with melted low fat Havarti on top, small amount of whole wheat flakes, 1% milk, blueberries
L: turkey breast and cole slaw wrapped in romaine leaves (4), cup of tomato soup
D: one pan seared boneless chicken breast, on top of whole wheat fettucini, with pesto, stir fired baby bok choy and mushrooms, 1 piece of dark chocolate
DH came home from his company's annual meeting with several gifts, including dark chocolate from Israel and France, truffles, and 2 bottles of champagne :).
While I consider myself "in training", I am working with my personal trainer/coach to drop 15 lbs before summer time. Racing is incidental and is not what I'm really training for. I'm training to ride across the country. All
of my rides in the last two months have low intensity. I've also been weight training so I've been gaining serious muscle mass and losing fat. Clearly something is going right. Once I am closer to my weight goal and amp up miles and aerobic levels, naturally I will eat a commensurate amount of calories.
Today: Breakfast sandwich w/ 2 eggs, ham + swiss
Lunch: Tuna wrap and spinach salad
AS: greek yogurt
D: Shrimp curry!
B: egg white omelette with low fat cheddar, salsa, an orange, coffee
L: veggie burger with melted low fat Havarti, cup of tomato soup, apple, pack of nuts and cranberries
one hour on the trainer, doing intervals
S: piece of Machengo cheese
D: glass of red wine, 2 very thin, pork chops coated with cumin, pan seared, with peach-poblano-cilantro salsa, and whole wheat fusilli with red pepper, olive oil, one dark chocolate truffle
B: egg white omelet w/ swiss, 1 slice toast with ham and slice cheese
L: tilapia, cucumber/tomato salad, sauteed collard greens
D: pork + fennel meatballs with blackberry preserves, frisée salad w/ poached egg + shallot vinaigrette
It is Crankin's fault...I found a wonderful cheese at Trader Joe's...Toscano cheese with peppercorns. This is just plain yummy!
Today:
B: steel-cut oats with berries, scrambled egg whites, skim milk, coffee
40 minute lower-body workout session, fitness walk prior to it.
L: whole-wheat tortilla wrap with skinless roasted chicken breast, turkey bacon, partial slice of Gouda cheese, sprouts...I was hungry!
1 hour bike ride....OUTSIDE :)
S: 2 small slivers of the yummy Toscano cheese (I am in trouble), handful of almonds and raisins
D: Smoked chicken/turkey sausage, 1 slice sprouted bread, 1 beer
S: berries and fat-free Greek yogurt.
I am still hungry for some reason, but I've eaten enough today - time to go to sleep!
What do you guys do with your egg yolks? I have chickens, but I buy regular grocery store eggs for the egg whites. I cook the yolks and feed them to the chickens. They love them! I would never dream of not eating the yolks of my own chickens' eggs!
Yeah I was eyeballing the big carton of egg whites wondering if it was a better value than a tray of 18 large eggs. There was no estimating in that fashion. Still, I have a place for the yolks. Once I'm doing making my egg whites, I just dump the yolks in the pan while it's still hot and they cook on the residual heat. Then chicken treat time!
Although sometimes my dog gets one as a treat :)
I buy the big carton of egg whites. I started out just dumping the yokes a few years ago, but since I buy organic eggs now, that's way too wasteful and expensive. We manage to still go through quite a few eggs a week, even with me using the whites from a carton. Sometimes I mix the whites with regular eggs, sometimes I just eat regular eggs. But, since this is the only way I can up my protein at breakfast (I'm allergic to whey), it works.
