Ages ago I disliked fennel/anise.
Now I enjoy the veggie. So far I just:
*sautee with tomatoes, onions and pasta with a bit of oil and soy sauce
*sweet fennel slaw with honey, lemon and onion I think. It was delicious

oh there is no veggie i love better raw than these. I have been eating fennel since I was a little kid, and the first thing I was given when i went to my grandfather's home town in Italy was fennel fresh out of his little brother's garden.. YUM..
excellent in salads and soups too
I like it in soupe au pistou. The flavor blends amazingly with the basil.
Yes, I munch on raw anise that he sometimes chops up and puts into certain salads. It's a refreshing taste. He is the salad-maker..I seldom make salads. I have my veggies in other ways.
Soup add in for that pistou soup sounds great.

Simple to make and delicious!
Fennel and Celery Salad
Serves 4 to 6
2 medium fennel bulbs, trimmed,
some fronds reserved
3 celery ribs, trimmed
1/4 cup extra virgin olive oil
3 Tbs. fresh lemon juice, more to taste
Salt to taste
1/4 tsp. black pepper, more to taste
Freshly shaved Parmesan cheese.
Cut fennel bulbs in quarters lengthwise, discarding outer layer if it is exceedingly tough. Use a mandoline to slice quarters thinly; slice celery equally thin. Put sliced fennel and celery into a large bowl and drizzle with olive oil and lemon juice. Season with salt and pepper and toss gently to combine. Top with lots of freshly shaved Parmesan and chopped fennel fronds if you like.
I had a really tasty arugula (sp?) and fennel salad with a citrus dressing. I also made one with spinach because the arugula went off...

Yes, I agree it's delicious roasted also.
Come to think of it, he's made a pureed fennel soup. I think he did put in abit of celery root too. He tries all sorts of soups that I can't keep track of his variations.

Fennel is one of my favorite vegetables! One of my favorite ways is in a potato-fennel salad made with a lemony-mustard dressing. Another amazing way to prepare it is by braising it in cream. Google 'cream braised fennel'. It is soooo tasty and a great fancy side dish to a holiday meal!
Just made this from our garden:
fennel bulb, sliced
yellow squash, sliced
garlic, pressed
red pepper flakes
thyme
cook up the veggies with a little white wine, then put over pasta and top with a bit of parmesan and some fresh basil strips if you have it
So fresh and summery! I love fennel.
I also put it in my tomato sauce that I make for pasta. Love it.
