For chai, it's a mix of ginger, cinnamon, pepper, fennel, cardamom, allspice, maybe coriander seeds, and black tea, and some sugar, boiled in a 1:1 mix of water and milk for about 10 minutes. strain.
you could make a mix and from the bulk spices bought, make christmas presents.
cappucino, froth some milk and add on top of an espresso. dust with cocoa.

Chai just means flavored black tea.
My chai is bit different: cardomon, cinnamon, allspice, vanilla and honey sometimes I'll add clove. Simmer good black tea with the spice and honey. strain and add warm milk.
how much to use? 3-4pods cardomon, 1inch piece of cinnamon, 1 inch of vanilla bean split lengthwise and scrape the seed into the mixture, 1-2 allspice berries and 1 clove. Use 2 tbs of honey, I prefer wildflower or orange instead of regular clove honey. boil this with about 1-2cups of black tea. Adjust your recipe to your taste.
I've been lazy so I just buy a carton of Tazo decaf chai. :D This is still cheaper than Starbucks. :D
