Oatmeal Cookies
From Cuisine Magazine Issue 22
Makes 3 dozen cookies
Bake Time: 11 - 13 minutes, 350 degree oven
Whisk together; set aside
2 cups all purpose flour
1 t. baking soda
1 t. kosher salt
1 t. baking powder
Cream “Wet” Ingredients with electric mixer
1 cup sugar
1 cup dark brown sugar
1 cup unsalted butter, softened
2 eggs
2 t. vanilla
Stir Flour Mixture into the creamed mixture with a spoon. Then stir in:
3 cups oats not instant
1½ cups raisins, you can substitute dried cranberries, cherries or chocolate chips

Form cookies and bake.

Added nuts instead of raisins because PP hates nuts just less than she hates raisins.... we'll see. The dough was good.... :cool:

Oh yeah. Those don't suck. Yum!
I baked a lot in law school, and my best friend gave me several of those cookie sheets that are insulated with air in them. They bake SO well - very even cooking. I also have some of those silicon Silpat baking liners. No matter what (even the recipes that PP "creates", th stuff cooks evenly and doesn't stick).
I should go check on the next batch. I will need to test them to make sure they came out as well as the first....
