I just noticed the two tubes I have for my mountain bike are 26x1.9-2.125. This has me a little perplexed, because my tires are 2.50, are these tubes large enough? Hoping I don't flat this week out on the trail solo, but don't want to have problems because my tubes are too small...

2.5? Wow, that's a wide tire! My widest are 2.35, and that's on the no-suspension bike.

IMO, the answer to your question is "maybe". Whenever possible, I like to use the right sized tube for the job. However, the widest tubes that I can get for my 29er are 2.1, and I use them with 2.35 tires with no issues. Then again, I'm running at very low pressures.

If it were me, I think I'd buy/beg/borrow a couple of wider tubes just for the peace of mind while riding solo.

Are you sure your tires are 2.5s? Did ypu swap out what came standard on the bike or something? The specs for your bike say the tires are 2.1, which is pretty standard for an XC bike.

Indy caught me, I was mistaken :o :) So.... never mind. Next time I will double-check twice!
