Hello - I am going to a wedding later this month and need some ideas to fix appetizers with no wheat.

The groom cannot eat wheat.

Any ideas?

Spring rolls wrapped in either rice or vegetable wrappers (veggie wrappers could be thinly sliced zucchini or daikon, lightly steamed cabbage or chard, Romaine or Boston lettuce ... )

Hummus with gluten-free crackers (homemade or storebought)

If they eat meat, seafood and/or dairy your options are just about unlimited ...

Deviled eggs

Any toothpicky meat/fish/shrimp/sausage thing

Cheese cubes with quince paste and/or or a selection of fancy honey

...

jalapeno poppers...cut the tops off, cut them length-wise, scoop out the seeds and white membrane, fill with cream cheese, wrap with bacon, then bake at 400 on a broiler pan until the bacon is fully cooked.

You can stuff jalapeņos with mashed potatoes too, for a lower fat dairy free alternative.

I would find out what "cannot eat wheat" means.
My mom is Celiac - that means she can't touch anything that has ever touched flour. If she eats something that touches a pan that had flour in it 2 washings ago, she is violently and completely ill to the point of having to go to the hospital. (last night someone put blue cheese dressing on their salad, then gave her a olive off of it that hadn't touched any dressing and, well, she's laid up today incapable of functioning)
I am gluten intolerant - that means if I eat a piece of bread I can't go too far away from a bathroom for 24 hr but will be fine. I can eat blue cheese just fine, and love the stuff.

I think it's important to know the levels you need to be prepared. I have 2 cutting boards in my house, 2 crock pots, 2.... one "gluten free" and 1 for every day use.

I also have their cookbook and it has a lot of ideas. The website will have some ideas too. I have a sensitivity to dairy and sugar and have found both to be helpful, like making my own milk for smoothies.

I don't think they know yet what can't eat wheat means. He is undergoing testing, etc. recently

risos (sp?) risotto rice balls with bit of mozzarella inside, dipped in marinara, rolled in shaved parm and fried or baked.

speaking of rice .... sushi :)

No, no food theme; just a vegetarian casserole which I have under control and I was asked to bring an appetizer as well. I just never make appetizers so am looking for ideas!

slices of fresh mozzarella with a basil leaf and a slice of tomato on top drizzled in a little olive oil and if you like a little balsamic vinegar

pan seared shitake mushrooms drizzled with a little ponzu sauce (soy sauce with a little citrus added - preferably yuzu juice, but lemon is OK to sub) mixed with minced green onion

two words; grilled figs :) can be drizzled with balsamic or a dab of creme freche or creme anglaise or ....

Be careful with the soy sauce - some is made with wheat.

OMG, that sounds good.

omg it is good. When I used to be a souse-chef at a hoity toity East Bay gourmet ghetto eatery that was one of our most popular dishes.

You don't have to mesquite grill it but we did :cool:
