Has anyone tried using both a wireless bike computer and a separate HRM? If so, was there interference between the two devices? I am debating several options for my new bike - and I just may wind up calling Polar, Cateye, and Sigma and asking them directly.

I've used a non-GPS Garmin and a cateye double wireless together with no issues. In fact, I do it all the time when I'm on the trainer.

I use both w/ no problem. I have a cateye computer and my HRM is a timex (I think).

I have a basic Blackburn computer for distance, mileage, avg. and a Polar HRM watch strapped on bike with no problem. Just after I bought the HRM my Specialized computer with elevation, temp, and all the rest went out and they don't make anything in wireless like that anymore unless you go Garmin so I just got a basic computer. I do have to rely on others for my elevation stats though.

I have a Garmin 310xt and use the cadence sensor with it.
Prior to that I had a specialized wireless sport computer and used it with a Reebok HRM. No problems.
I got the Garmin because I found out that I have a congenital heart condition and was told to watch my exertion levels. The 310 xt will do vibrating alerts. I really like that on group rides so my HR alert isn't being broadcast to everyone around me.
