Does anyone have an Oatmeal Pancake recipe(s)? We're going camping next weekend and trying to plan some meals so I don't stray off my diet(WW). Theres always too much junk/unhealthy food/meals. Thanks

Oatmeal Cottage Cheese Pancakes

Ingredients

1 cup oatmeal
1 cup cottage cheese
2 teaspoon vanilla
8 egg whites
Directions

Blend all ingredients in blender.
Spray skillet with cooking spray and cook just like"silver dollar" pancakes, a few small ones at a time.

These are really good.

2 c rolled oats (not instant)
2 c buttermilk
2 eggs
1/4 c butter, melted
1/2 c flour
2 T sugar
1 t baking powder
1 t baking soda
1/2 t ground cinnamon
1/4 t salt


Combine oats and buttermilk. Refrigerate overnight.

Add two eggs. Add melted and cooled butter.

Mix in separate bowl: Flour, sugar, baking powder, baking soda, cinnamon and salt.

Stir flour mixture into oat mixture until moist, cook on griddle.

I make these ahead and freeze, then thaw as needed. I use them as on the bike energy food with nothing on them.

I used uncooked, quick cooking oats. Those pancakes are so different from any other pancake I have made before. You really have to keep them small, or they don't cook in the middle, btw.

super tasty, and you can make it ahead of time. I made this yesterday for the first time and it will be a regular. I substituted whole wheat flour for white, smart balance for butter, vanilla greek yogurt for the plain, and chocolate chips for the peanuts, and didn't make the glaze.

I've made these for a quick breakfast on camping trips.
Cottage Cheese Muffins (http://www.101cookbooks.com/archives/cottage-cheese-muffins-recipe.html)

I also make sure to have washed and cut-up vegetables for quick and easy snacks. Raisins and walnuts. Bananas. Greek Yogurt with some granola.

I like to make these (http://www.101cookbooks.com/archives/001567.html) ahead of time too and enjoy them while the kids and DH are eating hot dogs or burgers.

I use basically the same recipe but sub in Bob's Red Mill 10-grain waffle and pancake mix for the oats. It makes a KILLER waffle! They do take longer to cook than regular pancakes or waffles, so cook on a lower temp to avoid burning the outsides. They freeze and reheat well, too (the waffles do...never tried it with pancakes).
