I've got an apple pie in the oven. It smells scrumptious. :D

Maybe I'll have pie for lunch today.

Awesome! What kind of apples did you use?

(signing off as the 2008 MN State Fair Blue Ribbon winner for the apple pie lot...ahem...not that I'm proud of it or anything...)

I can't help thinking about all the effort you put into your training. Is pie okay for you after the ice cream you had yesterday? How will you feel after you eat it? If there's going to be a rush of guilt, you should send that pie to me. :p

I know I couldn't sustain that strict of a nutrition plan for long, and most people think my eating habits are "restrictive." Let Veronica eat some pie!

I use Granny Smiths. I did throw in one Fuji that I had leftover from our camping trip. I make ugly pies. My crust never looks very good, so I'd never enter a contest. They taste pretty yummy. But they never have that perfect edge and my designs in the crust look like a 5 year olds.

I actually cheated on this pie and used Trader Joe's pie crust. It's a lot less work and it tastes almost as good as my homemade crust. It's been in my freezer since Christmas when I bought it in case I needed another dessert when Thom's folks were here. But the pumpkin cheesecake I made for that worked out well... But I had to get the crust out of my freezer.

Yeah, I really like my sweets still... in spite of all the training. I guess I figure life should be enjoyable and I enjoy cooking and eating. I never feel guilty about what I eat. My abs, triceps and biceps are still sore from my workout with Shawna on Wednesday, so guilt... not a chance!

Now that I'm on vacation I actually have time to cook and train. During the school year, there was not much "from scratch" cooking. :p

I have a mini cupcake staring me down. It had a twin not that long ago. Part of me is annoyed that I even had one, another part says enjoy life. Lately the scale has been bugging me, I'm beginning to think that the way I'd have to live to make it move the direction I want would mean a miserable life. Maybe this cupcake needs to be reunited with his brother......

Oh man, V - you are killing me! First icecream and now pie?! Oy. I'm so glad I don't live near you...I can't resist temptations like that! ;)

Mmmm, I have turkey wraps for lunch. Whoopee. I rather have pie! :p

I tend to eat cakes and cupcakes too - if they are quality cakes and cupcakes. I don't make either so when presented with the opportunity to have a good one, I go for it.

The ones the students bring in from the local grocery store for their birthdays are not quality ones and I say, "No thanks." to those.

I was actually thinking I would make scrambled egg whites and a turkey sausage for lunch. I have issues with cutting into the pie before Thom gets home. I didn't make it for him, but still... I think it should wait until dessert.

The egg whites and turkey sausage are camping leftovers and need to get consumed soon.

Yes! I like to bring out a whole pie to cut and serve at the table--which means I have to fend off the kids all afternoon. I figure it's a good chance for them to practice a little self-discipline. (Well, I guess if it were self-discipline I wouldn't have to fend them off.)

I'm planning on making a blackberry and apricot pie this weekend. And a lemon chiffon cake, just because I have to use up a lot of eggs and lemons.

mmmm. pie. i made a killer raspberry crumble tart the other day, with a shortbread crust. omg it was amazing. i haven't made a proper pie in ages. i'll probably wait for blueberry picking time and then go pie-crazy. or once the apples on our gravenstein in the backyard are ready.

today, my 4 year old and i made fresh strawberry ice cream to have tonight for dessert.
