Whats for dinner?
Salad, just a boring lettuce salad with hardboil egg, carrots, mushrooms, celery, a little cheese and vingerette dressing.

I picked up my first CSA basket of the season this afternoon. I have a club ride in an hour so I won't be cooking until tomorrow. I guess Shot Blocks today. ;) Green garlic soup and salad tomorrow.

Been eating giant salads from the garden for dinner almost every night lately. Salad is coming out my ears. :D
Last night made black bean soup with cilantro.
Night before that a big chef salad.
Tonight....instant mashed potatoes, and lemon sorbet. :confused: :cool:
Nice to have a weird dinner sometimes.

Tonight: the last of the flank steak fajitas I made last week, in a tortilla with rice, spring mix, a bit of cheddar and salsa. With Ben and Jerry's for dessert. :D

Tonight was a mish-mash of things. I didn't really eat lunch because I was riding.... So far for dinner I've had Vanilla Soy yogurt, pineapple, homemade vegan meatball subs (nate's meatballs, muir glen spaghetti sauce, and daiya cheese on a hoagie), and corn! I'm thinking about making a fruit smoothie after if I'm still hungry! :D

4 course dinner:
(2) swedish fish
(1) lean cuisine pizza (just cheese), with a bunch of 1% fat cheddar added to it
(1) Chobani 0% plain yogurt
and desert...
1 scoop plain soy protein powder, 1 Tbsp cocoa powder, 4 packets of stevia, some soy milk, and psyllium powder = chocolate protein mush. <3
I've got some bad habits. I ride at least 20 miles most days, so I have gotten into eating total crap. My bunnies eat better than I do.

BTW for lunch today I had vanilla ice cream and carrot cake. Lots of both.
It was the monthly birthday celebration at work, and this is one of only two months of the year when we get carrot cake -- because I have seniority for June birthdays so it's my choice and I love carrot cake. (November is the other month, when our VP requests it.)
I scored some leftover cake which I will enjoy over the weekend.

For dinner last night I had a crunchy peanut butter Cliff Bar and a large glass of skim milk. This was before my 20 mile bike ride, when I got home I had a nice glass of low-fat chocolate milk.
This morning I had a banana and milk for breakfast. There may be another Cliff bar in my future for lunch today...
I simply HAVE to do some cooking! I usually bake 4-5 boneless/skinless chicken breasts in advance and keep fresh/frozen veggies on hand so it doesn't take very long to prepare dinner but my schedule has changed this week. I try to keep it simple during the week to save time. More riding = less time to cook, so have to work this out. I like Cliff Bars, but I can't LIVE on them :rolleyes:
Now, that ice cream and carrot cake sounds pretty wonderful :D

I typically try to make two meals over the weekend that will last us through the week. This week it was pork loin with a chipotle spice rub, green beans and sweet potatoes and lentil soup. We finished the pork off last night (it was delish cold) and still have a fair amount of the soup left.

Desperation Dinner.
Both DH and I got home very late last night, and I was in no mood to cook. Took a Bertolli dinner out of the freezer, dumped it in a pot, added some additional chopped spinach, and viola! Pasta dinner for 2 in 15 minutes! :cool:

Last night I had the very first green beans of the season from my garden, in a sourdough crepe-ish experiment (sourdough starter + grated parmesan + a leftover egg white). Not too bad! I was still hungry so I followed it up with some cottage cheese and grapes.
Tonight I need to do something with some chard, okra, and canadian bacon. Not sure what it'll turn out to be yet, but there may be hollandaise sauce involved...

Burgers with herbs from the garden on homemade bread; salad with garden mesclun, avocados (NOT from my garden, alas), and local tomatoes. Mine aren't ripe yet.

Picked up lots of good stuff at the farmers' market yesterday. Last night was bow-tie pasta with fresh cherry tomatoes, garlic, basil and mozzarella. Tonight is a curry chicken salad (stopping at the store for roti chicken to make it quick and easy). Tomorrow night citrus-marinated grilled chicken with grilled asparagus and Sunday night is an asparagus and chicken stir fry with lemon thyme from my garden. I like to cook.
It's the last of the asparagus in these parts - so good, so short a season.... But I eagerly look forward to what comes next! Beets are just starting to show up, and zucchini, soon green beans and everyone's fave starting in late July, fresh sweet corn. Is is lunch yet?

Totally disjointed dinner last night. Made ginger glazed mahi mahi on the grill. Steamed some broccoli and topped it with some old lemon garlic butter I found in the fridge. Tossed a salad with avocado-basil dressing. I threw the leftovers of all that into a bowl today for lunch, wonder how it will taste...
Finished off with homemade berry popsicles :)

Tonight was "clean out the fridge a bit" night. I had a couple ounces of leftover flank steak (I'm impressed-I got five meals out of a little over a pound of steak!) coated in coarse-ground pepper, garlic powder and rosemary. Leftover burrito rice for carbs, and snow peas for veggies.
Turns out that veggies are much tastier if you cook them in a bit of butter and garlic. :D

I would say that's a bad habit... ONLY 2 swedish fish???? I finish off a couple of those single serving sized bags any time I have swedish fish!!! :D

I recently found a yummy Thai Chicken Curry recipe in the AIS (aust institute of sport) cookbook & it's ooooooo sooo delicious. Since my dear's away(eating yummy German and then Chinese foods), i'm going to make it a teeny smidgen bit hotter and ensure I add the yoghurt!
It's no fun cooking for only me for three weeks.

hmmm, another Cliff bar for dinner last night... I was at the Bloomington, Indiana RAAM time stop and was the only one there as no one was really expected for a few hours (the regulars were taking the chance to go and sleep). I figured the Cliff bar was a better choice over anything from Fazolis or Burger King!

My workstudy student was eating this amazing-smelling dish at lunch and I had to have the recipe. I made it last night. It is very easy to make.
1 can chick peas (drained, rinsed)
1 clove garlic
1/2 onion
1 cup diced peppers of all colors
basil, rosemary, salt & pepper
Sautee garlic and peppers in 1 tbsp olive oil, add remaining ingredients and sautee about 3 minutes. Place in bowl and toss with another tbsp olive oil.
Can serve hot or cold.
We had this with lettuce from the garden and tortellini and my daughter baked a loaf of french bread. Divine!

I don't know what my problem is, but I've really been craving salad--and I'm NOT a salad person. I bought a bunch of greens. Washed them, chopped them, and I've been eating them like a craved rabbit. With walnuts, fresh fruit, goat cheese, and whatever else I feel like at the moment. I just can't get enough salad.

I just got Rick Bayless's Everyday Mexican. I love his show on PBS. For tonight I tacos: flank steak grilled with an adobo sauce marinade served in corn tortillas with carmelized red onions. I also made his reciped for Mexican rice. I served sliced avocados as well. It was delish!

I always keep it simple with asparagus. Olive oil, salt, pepper. Sometimes balsamic :) i do the same for broiling brussel sprouts (I only started liking brussel sprouts when I had them this way from the WFM salad bar)

Can't remember the brand but it's just a reduced fat margarine type spread so it doesn't melt well.
I love garlic but I'd never do that to a sweet pea!

Maybe some ice cream for dessert? Or, maybe not? Just depends if I want to eat too much or not!

I'm probably going to spell all of this wrong, but last night my husband and I decided to go get Indian food at this vegetarian/vegan place and it was delicious... And to think I didn't like Indian food until a year ago!
We had Potatoe Pakora's, Paratha, Pulao Rice, and for desert we had peanut chew candy bars... mmm mmm!

DS: tomato soup with noodles and veggies (from Saturdays dinner)
DD: I dunno. Probably a variety plate of cut up veggies, apple slices with PB, graham crackers.

Spoke, your dinner tonight sounds a lot like our dinner last night: grilled chicken quarters, skin removed, marinated in olive oil with garlic, toasted cumin and fresh-squeezed juices of lemon, lime and clementine; grilled asparagus and sliced tomato topped with a drizzle of olive oil, a little s&p and a basil leaf each. Dessert was dark chocolate gelato.
Tonight is an experiment. I am cutting up a bunch of fresh from the market tomatoes (mine are only little green things right now) and sautéing in olive oil and garlic, mixing in some chopped basil (which IS straight from my garden) and tossing with pappardelle pasta, ricotta and a little left-over spinach that I have on hand.

Baked some chicken breasts last night. I think I'm having salad tonight...walnuts, goat or feta cheese, half a chicken breast and spring mix. Maybe some cherry tomatoes if they look good. I'll pick up some fruit too.

Cooking for the kids tonight...
Cheezy Chicken Cups
2 Tubes refrigerated Biscuits pressed flat and put in muffin cups filled with the following mixture:
1 can cream of chicken soup
1/2 bag frozen peas and carrots
Chopped cooked chicken
1/2 C shredded cheddar cheese
Bake 350 degrees for 20-25 minutes.
For the parents, salad :)

I'm home alone this week, so tonight I treated myself to wild salmon, marinated in lime juice, soy sauce, honey, and canola oil, accompanied by a salad with romaine, grape tomatoes, shaved parmesan, olive oil and balsamic vinegar, and a sweet potato. I just finished it with 2 squares of Trader Joe's dark chocolate.

Salad it was. Quarter of a chicken breast marinated in EVOO, honey, herbs de Provence, S&P for a little over a day (oops!), crumbled feta and walnuts over several handfuls of spring mix. The marinade for the chicken could have used a little extra salt if I were serving it on its own, but with the feta to add salt, it was pretty good. Just enough sweetness to make you go "what's that?" I added a few torn-up basil leaves (from the store; mine isn't happy at the moment) to the salad as well.
I'm torn about dessert. Ice cream, or a square or two of chocolate?

It was Pabla's Indian Cuisine, there's a location right here in Renton where I live and I believe one in Issaquah. You could probably look it up online.
Tonight's dinner was spaghetti with vegan meatballs and vegan parmesan, garlic and rosemary bread with olive oil and vinegar to dip, and I'm currently making some whole wheat blueberry muffins, that I will probably have for desert!

Two nights ago we had sauteed sliced radishes, smothered kale and mushrooms, roasted rosemary new potatoes and grilled turkey tenderloin. The radishes, kale and rosemary came from our garden. :)
Tonight we'll be doing leftover portuguese kale soup and fresh baked bread with a side of steamed broccoli (also from the garden).
And we've got fresh grown strawberries coming out our ears - we can barely eat them fast enough! They will be our desert every night and my snack during the day (with greek yogurt) for likely the rest of the summer!

1 avocado
1/2 cup fresh basil leaves
1 clove garlic
Juice of one or more limes
1/4 cup olive oil
Salt and freshly ground pepper.
Put all ingredients in a mini food processor or blender and purée until smooth; add a few drops of water if you like a thinner dressing. Yield: About 1 cup.
Tonight I'll have my latest hot weather favorite: hummus and tabouli and romaine on low carb whole wheat tortillas.
I had hummus on toast a few nights ago.

That is when I turn to my trusty supply of Cliff bars - when the local Performance Bike store opened they had a deal for some time where you could buy one box and get one free. I stocked up for the season - little did I know how handy they can be when I am too tired/busy to go shopping :eek:

Steamed broccoli with Parmesean, olives stuffed with garlic and jalepenos, gorgonzola, and Reisling.
Don't have anyone to cook for but me right now. And I'm so busy cleaning my house that I really don't want to cook.
Procrastinator's Steamed Broccoli
Open a bag of pre-cut broccoli from Costco
Rinse in a desultory fashion
Pile into a steamer basket in a lidded pot, with 1-2 inches of water
Bring to a boil
Immediately turn off heat and leave until ready to have dinner (10-20 minutes)
Pasta tossed with sauteed asparagus (fresh bought from Yakima yesterday!) and garlic and a bit of romano cheese. Fresh bread that I made today (got the 5 min bread book out of the library - wowee that recipe works well!!) Some tossed greens - from my own little garden. I think there's red and green oak leaf, a bit of ordinary green leaf, mache, something that might be radicchio and some funky red spotted stuff. Maybe a bit of wine.

So I was bad and made homemade tortilla chips...fried, not baked. Half the batch got a sprinkling of salt. The other half got cinnamon sugar. I ate all but four of the salted ones for dinner with a cilantro pesto/chutney hybrid thing...

Garlic, pepper, salt, baby shiitake, eggplant, plum tomatoes, zucchini, baby spinach, shiritake noodles, and some goat cheese crumbles... all sauteed up in the wok in olive oil.

Getting take out Indian to bring over to my cycling friends, who are leaving in 2 days for Bermuda. This trip is a replacement for them missing out on Spain, because of Brant's broken hip/crash. He is planning to test the hip out outside on the bike when they get back. It's been a long time since March 17th, although he has been on the trainer religiously and walking.
I know we will be having chicken mango and lamb rogan josh, but i m sure there will be more!

There is a really wonderful, pretty affordable, truly gourmet vegetarian/vegan restaurant in Seattle called Carmelita. One of my all time favorite places here.

Because we never know what our co-op shares will contain there is no real planning. Kind of like 'Chopped' only their pantry is quite a bit more extensive than ours.
On our fantasy food show it is also important to use up all the things that will go over the soonest.
So we're having deconstructed stuffed peppers- because the peppers are all funky shapes- cauliflower, fresh garlic (from the coop), mushrooms, quinoa (from the pantry). Leftover duck.
Some kind of orange sauce was emerging when I came in here.

Tonight for dinner I had a huge bowl of steamed swiss chard fresh from the garden, with chunks of fresh mozzarella on top. A big cup of nettle and black cohash tea with honey.
making pizza with homemade part whole wheat dough right now - artichoke hearts, fresh mozzarella, grilled zucchini & eggplant on top (no sauce!) with a glass of nice Spanish red wine.

Just had the leftover homemade gnocchi with gorgonzola sauce from last night. Tonight it will be pizza (also homemade), probably with anchovies.
That avocado-basil dressing looks fantastic. I'll be trying that soon.

There is a really wonderful, pretty affordable, truly gourmet vegetarian/vegan restaurant in Seattle called Carmelita. One of my all time favorite places here.

Once a year I allow myself to eat fried seafood and today was my day. We did a group ride in Portsmouth NH and York Maine, which ended at a lovely seafood shack. I had a delicious, non-greasy scallop roll, along with about one quarter of my DH's onion rings. I know they were good, because usually, I would feel sick from this, but I was fine. In fact, fine enough to stop for soft serve ice cream on the way home!
This was a late lunch, at about 3:00. I am already hungry again and the ride wasn't even that hard. It looks like left over black bean soup and a tuna salad.

Dinner turned out to be a chicken sandwich with a bit of Dijon mustard and cheddar with lots of steamed broccoli on the side, with garlic hummus to dip it in.

As proof of how much time I have on my hands, I made Indian rice pudding for breakfast. Leftovers will likely be dessert tonight and breakfast tomorrow, as I'm going home for a week. Yay!
Anyway, tonight's dinner is going to be the rest of the soup from Tuesday, probably with water crackers and goat cheese. I have some pickled broccoli stems going in the fridge (cinnamon+cardamom and garlic is an...interesting olfactory experience!), so I think they'll be the veggies!

I have not prepared any home-cooked meal for almost the past month. And won't be until 3 days later since I've been overseas and now visiting folks in Toronto.
Not even sure what place we will eat at for supper since it's holiday today, Canada Day with a number of closed restaurants.
But plan to have a dinner tonight somewhere at a restaurant with a sister I haven't seen for a year.

I need to go to the grocery store. Refrigerator raid produced: hummus with olives, heirloom cherry tomatoes, and watermelon. Had pita chips to go with the hummus.
I have a mad craving for gumbo with shrimp, and alligator andouille sausage. Just can't decide whether to make okra gumbo or file gumbo. :cool:

Yum! My family is having a big reunion this weekend in Acadia Parish. I'm not going because of cost and other travel...but I'm sure they will eat well and have a big ole' party. My father, stepmother, brother, niece and nephew will all be there. I've asked them to please have a big bowl of crawfish etouffee on my behalf.
I prefer gumbo made with okra, but that's just me.

My favorites are Bamboo Garden (my fave dishes are the Chicken Chow Mein, Chicken Fried Rice, Corn Chowder, and the Sweet N Sour Chicken Balls), Hillside Quickie (particularly the one in the U district - any sandwiches with Seitan are good, the Peanut Butter Cup Milkshake is the most amazing thing I've ever eaten, and the Mac N Cheese is delicious), Pizza Pi (also in the U district, but the other end, all vegan pizza place, my favorite is the "Hawaiian" Calzone, #4 I think. They also have the most amazing salads with "Chicken" strips, bleau cheese dressing, root bear floats, ice cream sundaes, apple-cinnamon pockets kind of like dessert calzones, etc. etc.), right across the street from them, and from the same owners as Pizza Pi is Wayward Cafe for the most amazing vegan breakfast you could imagine (think pancakes, sausage, tofu scramble, crepes, waffles, etc.), AND right across from them is the vegan grocery store! Cafe Flora is another good vegetarian gourmet place, with a few vegan options on Capitol Hill, I actually prefer it to Carmelita's (My favorite is the French Dip with au jus and sweet potato fries). I'm sure you could look up all these places online, along with their menus. There's a lot more, but those are the best of the best. Have fun!

never had alligator andouille though - I tend to use TJ's chicken andouille, sacrilege I'm sure, but I like it.

I never had Okra until I was in Belize in April '09, amazing!!!
Oh and I'm so excited, I don't know where else to post this, so I'll put it here... but my husband and I just joined our local CSA, and our first organic fruit and veggie bin is going to arrive on Tuesday! I can't wait to see what I get and try to figure out how to use it.

I finally actually cooked something other than baked chicken and steamed veggies :) For some reason I was hungry for soup - so I made some some of my never-the-same-twice refrigerator soup! This batch happened to have
Rainbow Chard, onion, cannellini beans, fire-roasted tomatoes, chicken, rice, and lots of spices
Yummy :) For dessert I had fresh Bing cherries :)
Even better, I made enough that I don't have to cook for awhile!

We smoked and grilled a pork shoulder. Yesterday I made BBQ sauce for it. The first step is turning 2 liters of root beer into a cup of syrup. :D
Pretty tasty stuff though.

Lamb chop, roasted brocolli drizzled with grapeseed oil, sweet corn on the cob. Sipping a lovely homemade (no mixes) margarita while it cooks.
Then back to the Girl with the Dragon Tatoo after.

Meat: Chicken breast dipped in a butter-lemon juice-spice mixture, then baked (I used garam masala with a touch of Madras curry powder for heat)
Carb: Corn salad. I used freshly roasted corn, half a seeded jalapeno, lots of cilantro, lime zest, part of a green onion, and garlic. Dressing consisted of melted butter with lime juice, cayenne pepper and cumin.
Veggie: Sauteed baby spinach with garlic
"Weird" side: half a baked-then-broiled peach with a balsamic glaze and a bit of blue cheese.
I think I'm doing the dishes, then getting out of the house for a while. It's hot, not aided by my doing all that cooking.

After a long vacation, it's good to be back preparing one's own meals. And no it's not BBQ meal since BBQ's are forbidden on our condo balconies. ;)
Am making focaccia with sundried tomatoes, red peppers, onions, garlic and feta cheese.
Dessert focaccia with fresh blueberries, raspberries, sliced apricots drizzled with honey, spiced with cinnamon, fresh ginger root, cardamon, nutmeg, and crushed aniseed. It's mixed up creative. :)

For dessert: NJ blueberries and non-fat yogurt.

I've been using the livestrong website to track my nutrient totals and when it came to dinner tonight I was nearly at a loss. Somehow I managed to exceed my sugar 'daily allowance' earlier in the day by eating a salad comprised mainly of roma tomatoes (after having raspberry jam at breakfast), and my fat intake was also slightly surpassed. I'm hellbent on keeping my fat and sugar under my daily allowance total so tonight for dinner I had 4 scrambled egg whites and lightly salted cucumber spears. booooring :rolleyes:

I had a baked chicken breast with stir-fry veggies and the beer from Saturday that I never got around to drinking. For a snack later I had some no-fat cottage cheese and an apple.

Last three meals I made were farmer's market and backyard garden extravaganzas. I am not always this good, but 'tis the season! ;)
Thurs night: pork chops from local pork farmer pan sauteed in garlic cream with tarragon from my garden, sliced tomato from the farmers' market and steamed green beans plucked from my garden.
Friday night we took DP's Mom out for dinner at a restaurant that trys to buy most everything from local sustainable farmers.
Sat: garlic lemon grilled pork chops (same farmer) topped with lemon butter chive (my garden) sauce, another sliced tomato from the FM and grilled asparagus from the FM with a dash of balsamic.
Last night: lemon thyme (my garden) chicken/asparagus stir fry - chicken breast from a different local farmer and asparagus again from the FM. This week was the last of the asparagus so I went a little asparagus crazy.
Tonight, DP has to work so we're on our own. I will probably just throw in a Trader Joe's ham and gruyere tart/"pizza" - those things are soooooooo good!
Tomorrow night, a pasta dish using a bunch of zucchini and yellow squash I picked up at the FM last Thursday. My squash is just starting to come in.
