I want to get rid of the auxiliary brake levers on my handlebars- the ones for braking when you are riding with your hands on straight part of the bar. (obviously a newbie here!) Does anybody know how the cables are attached to the brifters? Can this be done at all? Thanks.

You can, but it will involve replacing the cable housings - they're cut to accomodate the cross levers.

Shimano's website has really helpful technical documents for all their parts, if that's what you have.

Your LBS bike store can do this very easily. You'll need to replace the brake cables, so it's not something you can just 'take off' by unscrewing a few things.
