I thought I'd share some of my favorites for potlucks...

RAMEN SALAD

2 T toasted sesame seeds
1/2 C slivered almonds, toasted
4 green onions, chopped
1/2 medium cabbage, shredded
1 carrot, grated
1 pack chicken flavor ramen

Dressing
1 T sugar
1/4 C oil
3 tsp white vinegar
1 tsp salt
1/2 tsp black pepper
flavor pack from ramen

toast almonds and seed. Mix grated carrot, cabbage, green onion and seeds. Mix dressing together. Right before serving, crush noodles from package and toss into salad, and toss the dressing in.
Variation: add diced chicked breast.

Good for outdoors, no mayo to spoil.

This one is good for EVENTS where you need to make an impression but it's really easy to make. (appetizer)

preheat oven to 350

Grease a 10" springform pan, and get out the cuisinart.

1/2# smoked salmon minced
3 eggs
3 C sour cream
2 8 oz cream cheese
1/4# soft butter
1 tsp baking powder
1/4 C flour
2 C sharp cheddar, grated

puree everything in the food processor until very well mixed. Pour into greased spring form pan. Bake @ 350 for one hour 10 minutes. Cool completely. Run a knife around the edge to release it ( I forget if you do this hot or cold) Final touch... "frost" it with a mixture of pesto and sour cream.

serve with sliced baguette or some sort of fancy cracker. Leftovers are really good on bagels.
