well today i got up and made my dad a nice healthy omelette and some potatoes!
after church, it was time for lunch! what to make him??
after looking in the pantry and seeing that my mom has 21 cans of green beans, i decided to go with something along those lines :)
i searched all over the internet for some great greenbean casserole recipes, but they all had fried onions on top. remember, i'm trying to keep this healthy for my dad so i wanted something other than fried onions. i took all the ideas from the recipes and came up with one of my own.
1 can of cream of chicken
2 cans of green beans
shredded chicken (i added garlic and pepper)
1/4 cup chopped onion
almonds!
i cooked the chicken. i heated the greenbeans. i added the soup. dabbed a little bit of onion in there. mixed it all together and heated it up. i topped it with toasted almonds and put it on a plate with some french bread. he loved it!

25-onions
140-almonds
if these are anywhere near right, the dish was 575 calories total. it made a TON and we split it down the middle.
287 cals each or so for the yummy GB casserole. i'd say it was amazingly delish. its now one of his favs ;)
