Anyone got a good one? It doesn't have to be a slow cooker recipe but I'd sure like to get one for the slow cooker.

Here's one I found on RecipeZaar.

Vegan Vegetable Chowder With Quinoa (Gluten/Casein Free)

Ingredients
4-5 cups miso or vegetable broth
5 large mushrooms, sliced
1/2 cup corn
1/2 zucchini, sliced
1 cup celery leaves, packed
2 stalks celery, chopped
2 large carrots, sliced
3 tomatoes, diced
1/2 cup dried beans
1/4 cup quinoa, uncooked
1/4-1/2 cup soymilk, unsweetened
2 bay leaves
italian seasoning
garlic powder
salt
fresh ground pepper

Directions
1. In a large pot, or crockpot, combine all ingredients except for soy milk.
2. Bring to a boil and simmer for about 2 hours (until beans are soft).
3. Pour in soymilk just before serving to desired creaminess.
4. *I like miso-broth, but use any broth you choose. Tomato juices makes a nice option, too. Use varied amount, if you would like a more ‘broth-y’ soup, or more of a stew. I used about 4-5 cups.

My problem with quinoa (the brand in the red box) is that I keep finding tiny pebbles in it that I bite down on while eating. AGGGHHHH!!!!! :( I wash it but the grain doesn't float so how are you supposed to get any pebbles out of it? After 3 unpleasant surprises I've stopped buying it.

Anyone else had this problem?

Here's what I get at the health food store (no bulk places around here):

I bought mine in builk twice and didn't ever find a pebble. That would certainly stop me from eating tho.

Maybe it's just the red quinoa? I've never bought that but I've never had a pebble. Usually I get Eden brand, which isn't pre-washed.

Thank you Kerry!! That looks really good and I'm going to try it.

I buy Bob's Red Mill. I've never found a pebble either.

Here's another quinoa recipe that sounds god. Havne't made it yet (not crock pot either..)

Quinoa Curry Mango Salad

Quinoa has more protein than any other grain; it's delicious in this summer salad.

Prep: 20 minutes; Total: 20 minutes

Ingredients

1 cup quinoa (about 6 ounces)

1/4 cup canola oil
2 tablespoons white wine vinegar
1 tablespoon mango chutney, chopped if chunky
1 1/2 teaspoons curry powder
1/4 teaspoon dry mustard

1 cup chopped peeled mango plus mango spears for garnish
1 cup chopped unpeeled English hothouse cucumber
5 tablespoons chopped green onions, divided
2 cups (packed) baby spinach
Preparation
Cook quinoa in medium pot of boiling salted water over medium heat until tender but still firm to bite, stirring occasionally, about 12 minutes. Drain well; cool. Transfer to medium bowl.

Meanwhile, whisk oil and next 4 ingredients in small bowl to blend. Season dressing to taste with salt and pepper.

Add chopped mango, cucumber, 4 tablespoons green onions, and 1/4 cup dressing to quinoa; toss to coat. Divide spinach between 2 plates. Spoon quinoa salad over spinach. Garnish with mango spears and 1 tablespoon green onions. Drizzle with remaining dressing; serve.

To chop a mango: Cut mango in half lengthwise, slicing around the pit. Cut a half-inch grid into flesh of each half. Using your thumbs, push up skin side so cubes stick out. Slice off cubes at base.
