Hi there,
Thought I would share my recent snack creation.
I wanted to add nuts to my diet but didn't want to just have them hanging around because I'm not the best with portion control. :)
So I took the rice crispy treat recipe and modified it thus:
Melt : 250g marshmallows & 1/4c butter or margarine
Remove from heat.
Add : 1/4t vanilla (optional, not sure why but I use it)
Mix in : 2c crispy rice cereal (not sure if I can use the real name here)
Mix in : 4c mixed - roughly chopped nuts (cashews, almonds, walnuts), sunflower seeds, dried cranberries.
Those last 4 cups could be anything you like, I'm guessing, but I'm no food scientist so couldn't guarantee how things might turn out.

Press the mixture into a greased pyrex pan (lasagna size, for thin bars). It's helpful to dip the spoon/knife into hot water when pressing the mixture.
Cut and eat as desired. Enjoy!
