After reading the bean recipes on here I wanted to make some chili. Safeway had ground bison on sale so I started with that, then added an onion, garlic, a green pepper, half of a red pepper, half of a yellow pepper, a can of tomatoes, a can of mushrooms, a can of corn, a big can of kidney beans, and a smaller can of some other bean that I'd never heard of before but it was on sale. Added some chili powder, paprika, corriander, black pepper, and worchestershire sauce to the whole thing.

It needs to be spicier, but overall seems like good winter food. It's the first time I've made chili so I'm pretty happy with the experiment.

What do you guys put in chili?

That would be chilli with beans.

"What is Chilli?" depend on who you ask. Tex-Mex person, a Texan, American living in the southwest, or not... It all depends.

They all seem to agree on one thing. Chilli, meat, and salt.
If you are a purist, you soak dried chilli pod in hot water to soften up the "meat" of the pepper so that you can scrape it out away from the skin of the pepper. This is the chilli powder...

Pascilla, Gualjillo, Ancho, and few other varieties can be used.

Mine has chopped/minced meat (cheaper cuts are better for this), onion, tomato, scraped chilli, cumin powder, jalpeno pepper if not spicy enough (gualjillo pepper can be really hot at times...) and if I feel bit mean I use half of a habanero, salt, bit of vinegar. Oh sometimes I add pinto beans and cooked it all together. Green pepper (capsican) if you must.

nooo sour cream, nooo chives or chopped green onions.

I'm pretty simple when it comes to food on the range ;)

The recipe I use has vinegar and cinammon in it (Cincinnati style)
I've never heard of corn in chili

My super easy vegee chili...
I use Boca soy crumbles as the "meat".
I saute a chopped white onion in a bit of olive oil, then I add the boca crumbles, a couple of cans of chili ready tomatoes. (or chopped maters if I don't have the chili ready ones),a cup of broth, and a can or two of kidney beans. And then I get going with my spices. I use a mixure of new mexico style chili powders, garlic powder, salt, pepper, and a tablespoon or so of cocoa powder. (unsweetend of course).
Yes, cocoa powder, it's my secret ingredient.
Sometimes I also use cumin. I basically season to taste.

I LOVE these - I've made a pretty good veggie sloppy joe with them too.

The Italian Crumbles are pretty yummy too - I make a soup with potato, kale and chicken stock which tastes pretty much like the Olive Garden full of fat and calories version:)

Mine's pretty basic:
-cook up some hamburger with some chopped garlic and onion; jalapeno peppers/bell peppers go in at this time as well if I have them on hand
-add a can of tomatoes and a small can of tomato sauce, some kidney beans and/or black beans, and lots of cumin and chili powder
-Sometimes I add corn or other veggies (chopped fairly fine) as well.
