Hi All,

I lifted this from another website. It sounds pretty good.

This recipe is from Cooking Light. It's really great--

Banana-Nut Energy Bars
From Cooking Light


1/2 cup mashed ripe banana
1/3 cup packed brown sugar
1/4 cup honey
1 tablespoon vegetable oil
1/2 teaspoon vanilla extract
1 large egg
1/2 cup all-purpose flour
1 1/4 cups multigrain hot cereal (such as Quaker) or quick-cooking oats
1/4 cup chopped pecans
1/2 teaspoon salt
Cooking spray

Preheat oven to 350°.
Beat the first 6 ingredients at medium speed of a mixer until blended. Lightly spoon the flour into a dry measuring cup, and level with a knife. Gradually add the flour, cereal, pecans, and salt to the banana mixture, stirring until well-blended.

Spoon mixture into an 8-inch square baking pan coated with cooking spray. Bake at 350° for 25 minutes. Cool completely on a wire rack.

Yield: 12 servings (serving size: 1 bar)

Thanks! There are those days that I have to wonder if I'm going to make it back to the trailhead. My husband's heard me say more than once, "Just leave me for the cougars."
