I finally splurged and purchased a waffle maker - I have been craving home made waffles for weeks.
But I don't want to make waffles out of a box. Anyone have any tried and true, extra yummy waffle recipes they would be willing to share? I love waffles that are so yummy one does not need to cover them in butter and/or syrup.

I have a great whole grain one that I can post tonight from home. I'm at work and don't trust my memory. We mostly use real maple syrup, but top them with various berries when they are in season. Homemade applesauce is also a yummy topping, now that it is fall.
my husband and I have figured out that dried blueberries make a great addition to the batter- they bring all the flavor but not the water to the mix, fresh ones are too wet and they stick to the waffle iron.

If you have the Better Homes & Gardens cookbook (Ye Olde Standby, the red-plaid ring binder one), the waffle recipe where you separate the eggs, beat the whites, then fold them back in is excellent. A little time consuming, but great.

The question is: What kind of waffles? The American crispy kind are made with separated eggs and stiff beaten whites. The Norwegian soft kind are not. Norwegian waffles also sometimes have cardemom in them (mmmmm!). Then I have a lemon-flavored waffle recipe that's quite good. And a friend of mine makes delicious waffles with left-over mashed potatoes.

I love Cooking Light's flaxseed waffle recipe, it also includes a simple recipe for a berry syrup. You can substitute any kind of berry (fresh or frozen) for those listed in the recipe or serve with regular maple syrup. Sometimes I have them with a dollop of Vanilla Greek-style yogurt and fresh fruit, instead of syrup.

Mmmm...yummy. I am definitely trying all of these...two berry syrup, sweet potatoe waffles...love this.
Five one - I would definitely be interested in the whole grain.
Duck - Maybe its the half bread Swede in me but I absolutely looooove cardamom...please do share the recipe.

I make Norwegian waffles all the time (or at least quite frequently), but don't actually use a recipie. For a litre of milk (about two pints) I use 3-4 eggs (depending on how fluffy I want the waffles), then add enough white flour to give the batter the consistency of thick cream (not as thick as amercian waffle batters, more like a crepe batter). Add a good sprinkling of ground cardamon (a couple of teaspoons maybe) and a couple of tablespoons of melted butter (or oil if you prefer). Turns out delicious every time, especially when topped with a bit of sour cream and fresh strawberries.

Greek style yogurt is thicker, creamier and less tangy than regular yogurt; and they usually don't use gelatin as a thickener. It's made with whole milk and comes with a cream layer on top that you mix into it, although, fat-free is available.
Greek Gods (http://www.thenibble.com/reviews/main/cheese/yogurt/greek-gods-yogurt.asp) is my favorite brand. Their honey yogurt (Which is what I use on the waffles, not vanilla. I made an opps.:o ) is divine. Sometimes I'll serve it as dessert with some chopped nuts and berries. Yummy! The plain is good for cachumber salad and as a base for creamy dressings instead of mayonnaise.

Okay...this is actually a pancake recipe I altered and made my own. The original came from the classic 70's vegetarian cookbook called Laurel's Kitchen.
1/2 c. wheat germ
2 c. whole wheat flour
1/4 c. ground flax meal
2 t. baking powder
1 T. brown sugar
1 t. cinnamon (optional)
1 t. salt
2 large eggs
2 1/2 - 3 c. vanilla soy milk (I use Silk brand). Regular milk is fine, too.
2 T. canola oil
With a whisk in a medium bowl, stir together all dry ingredients.
In a separate bowl, beat the eggs slightly and combine with the milk. Add the oil and beat to mix well, then add wet to dry ingredients and stir until just combined.
This will make 6-8 6" round Belgian waffles. Most of the time we use real maple syrup on them, but applesauce is also great, and of course, seasonal berries. I've also added a ripe mashed banana to the batter with good results.
Hmmm...I'm hungry :p .

Pumpkin Waffles
2 cups biscuit mix
2 Tablespoons packed brown sugar
2 teaspoons ground cinnamon
12 ounces undiluted evaporated milk
1 teaspoon ground allspice
1/2 cup pumpkin
2 Tablespoons oil
2 eggs
1 Tablespoon water
1 teaspoon vanilla
Mix in stages. Beat till smooth.
Bake on waffle iron.
Enjoy!

Yummy. I am so excited to try all these recipes.
Thought I would share one I tried last week. These smell soooo yummy while cooking and taste just as good. I did a mixture of white and whole wheat flour and they turned out really good. I also added the molasses. Also, I used egg substitutes and Fat free milk, as I didn't have any buttermilk, but it turned out fab.
Enjoy!
Ginger Waffles
1 1/2 c. flour
1/4 tsp salt
1 tsp soda
1 tsp baking powder
Equivalent of 3 beaten eggs
1/2 c. molasses
1 c. fat-free buttermilk
1/2 c applesauce
1 tsp ginger

Thanks a lot, Sulis! I'm supposed to be working. Yet, now all I can do is sit here daydreaming about waffles.
I used to make a really good sourdough waffle. Crispy on the outside and soft on the inside. But, you have to have a sourdough starter to make it. I'll dig the recipe out later if anyone is interested.

Too bad we all live so far away from each other. A TE waffle ride would be super fun! A local riding group that DH sometimes rides with does an annual waffle ride. They ride to a park with waffle irons, batter, and other breakfast foods in tow. Than it's a big waffle party where they taste each others' wares. Mmm.....

While I was looking for my sourdough recipe, I came across this one. It's not really a breakfast waffle, more of a dessert. Why not have a little fun with your waffle iron?
Waffle Berry Shortcake
2 cups strawberries
sugar to taste
juice of one lemon
1 box pound cake mix or lemon cake mix
1 pint vanilla ice cream
1. Slice berries into a bowl. Sprinkle with sugar and squeeze on lemon juice. Set aside.
2. Prepare cake mix according to package directions, adding 1/3 to 1/2 cup more water than instructed, making a thick flowing batter.
Heat oiled waffle iron.
Pour 1/4-cup batter onto center of waffle iron. Cook until firm.
3. Place a scoop of ice cream on each waffle and top with strawberry mixture.
Makes 8 servings

I was just thinking about making up a giant batch of waffles this week to celebrate the beginning of cross season in Southern Oregon. I have a number of waffle recipes that I rotate through, but this seems to be the family favorite:
Chocolate Waffles
1 1/2 cups all-purpose flour
1 Tbsp baking powder
1/2 tsp salt
1/2 cup white sugar
3 Tbsp unsweetened cocoa powder
1 cup milk
2 eggs
1/4 cup butter, melted
Preheat waffle iron. In a large mixing bowl, stir together flour, baking powder, salt, sugar, and cocoa. Stir in the milk, eggs, and butter until mixture is smooth. Pour mix onto hot waffle iron (greased). Cook until golden brown. Smother with topping(s) of choice.

If you really feel like being decadent waffles with chocolate chips in them are sooooooooo good.
