Thom got it in his head to make this today. I have visions of Evil Pork Day running through my head.

Anyone up for Diablo after lunch? I can probably give you some entertainment with a green face. :p

As a Southerner who spent years in Memphis, please inform Thom that you don't decide to make BBQ anything "today". It takes weeks of planning and days of preparation:p :p

Uh.. so which one of those do you recommend?

I am fortunate in that I've got a local Louisiana BBQ place that slow smokes their stuff. Oh MAN their BBQ is good. and I say this when I typically don't really like BBQ.. or at least around here (near where V is). Ribs are my fave here.. another one of those items i typically don't like.

I like the ribs. Not really getting the beef brisket thing. Seems too dry to me.. but a good beer (gordon's), their piles of ribs, some of their cajun corn and their mess of greens.. I'm a happy camper. :)) Well, ok.. maybe another beer.

Use Corky's dry rub for the grill and Sweet Baby Ray's for the sauce.

Sorry. Corky's Sauce is good but it's been shoved to the back of the shelf for Sweet Baby Ray's (http://www.sweetbabyrays.com/)

Dry rub is the only way to go.

I made my own dry rub and I'll be making my own sauce using root beer as a base. First direction - reduce two liters of root beer to a cup.

I haven't been to the Rendevous in a long while. True that you can't decide just to make pulled pork in one day unless you've already dug the pit. But even then you need a good 24 hours just for the cooking.

MMM.... We went to Memphis for my birthday and hit Rendevous. I went for the famous ribs and was very impressed. Of course Texas barbeque is just a different animal all together. We know our brisket down here! :D

I must say, now I have a hankerin for Jim and Nicks!! Oh MAN is that some good que!! Best lemon icebox pie in the greater B'ham area IMO. I know there are probably more "authentic" que places, but I just LOVE Jim and Nicks! It's the first place I go after I land. Our friends out there Know the drill! LOL
Actually whenever I go back there it becomes a tour of bbq joints! :D

Hmmm... Maybe THAT will be my reward when I finish IM next week. A quick trip down south!! :D :D :D

Well, if you know Jim & Nicks, you know Milos that is owned by Silver's cousins too! (Cousins????? It might be "third cousins, twice removed"...but that only matters in the south!)


For years, my office was across the street from Corky's original location...made many a U-turn on Poplar Avenue on a spring day as I drove by and got a whiff of that BBQ cooking!

Your making me REALLY want to take a trip down your way! Of course our friends moved from Hoover to Villa Rica GA a few years ago, but I can still stay a day in B'ham just for the cue. I had Williamson brothers in GA, as well as Jim n Nicks at their GA location, but I like the one in B'ham better. Actually I think it was in Pelham? Can't remember, but yes you can smell good cue from MILES away!!
And here I am trying to watch the diet in prep for the big race!! You know I DO have to get on a scale at registration in front of ALL the other athletes! :eek:

Yes, but for all the endless debate, there's still only one that earns the title....MEMPHIS!:D :D

Here's the reason: I don't eat food with my fingers...but dry (that is, seasoned) ribs from the Rendevous...now that's worth getting your fingers messy for...SO, if Memphis ribs could convert me, then they must be the best.:) :)

Oh and CC- In the south it's mostly pork. Texas is known for their beef brisket.
It's a very regional thing. Right down to dry rub (seasoning of the meat) or wet, and what kind of sauce that comes with it. Vinegar based, tomato or no, mustard based etc. You could literally tour parts of this country and just go around tasting different kinds of bbq- or 'cue.
