My buddies and I are going on a road trip for a race this weekend. I might have some time to bake some treats tonight, as long as it's not too complicated.

Does anyone have a recipe for a healthy energy-packed oatmeal raisin cookie/bar? V? Anyone? :confused:

I don't know. I figure as long as they're part of a workout food, and are packed with oats, raisins, walnuts, whatever - that's a health food in my book. Better than a Twinkie. It's real food.

I think that looks super healthy! :D

I would add more "stuff", like nuts, millet, flaxseed or flaxmeal, extra dried fruit (chopped dates, apricots, whatever) - especially if Bluetree wants to bake them as a bar, they'd hang together well even if more dry ingredients and be more filling/nourishing if there was more stuff like that in them. We've been putting flax meal in our oatmeal cookies and they taste great (and Omega 3's to boot!).

For those who like Peanut Butter cookies with oatmeal I tried this recipe and its really really good

1) 1 cup whole wheat flour
2) 3/4 cup brown sugar
3) 1/3 cup instant oats
mix these all together
4) 5tbsp unsalted butter
5) 1 cup crunchy peanut butter
6) 1 whole egg
7) 1tsp pure vanila extract
8) 1tsp baking soda
Mix well together and add whatever you want, I usually end up adding cranberries (dried) or dates and some pecans.
Bake them at 350 for about 8 minutes and turn the baking dish around and then bake for another 8 minutes.

Enjoy

Thanks Freshnewbie, that looks like a good recipe. Love to use the whole wheat flour instead of refined.

Do you think this would turn out OK w/natural peanut butter instead of chunky? I am going to give it a try over the weekend,

Hey Colleen, Yes I am with you on Whole wheat flour. I actually use natural crunchy peanut butter myself for this recipe, so I am sure it would be fine to use the natural creamy one too. Just make sure you stir it when you open it, because it does make cookies softer and chewier I guess. Otherwise these are not such a guilty pleasure :p and they stay fresh for couple of days too.

I will be lucky if they last a hour in my house!

I am definitely trying these. I will substitute brown sugar splenda in these and let you know how it works. I've used it in other recipes w/good success.

I just made these with all natural peanut butter and they are delicious. The guys also givem them an exellent rating. :cool:

Good cookies! I made a batch today using the brown sugar splenda. Calculating the calorie count for 36 cookies, they come to about 90 calories each, not too bad.

I added dates and walnuts to half the batch, made the other half plain (my kids often balk at any addition to a cookie that isn't a chocolate chip). Both were good, but better w/the dates and nuts. Thanks for a good recipe! I added it to Sparkpeople recipes.
