OK, this is embarassing...

Does anyone have the BEST caesar salad dressing recipe. I'm talking, eggs, oil, anchovies....

My friend makes her mother-in-law's "famous secret" recipe and can't give it, yeah right.

Anyway can anyone give me their scrumptuous dressing recipe?
forget the Calories!!

1 tsp. salt
3 eggs
1 1/2 tsp. sugar
3/4 tsp. dry mustard
3 tsp. lemon juice
1 tsp. Parmesan cheese
4-6 cloves crushed garlic
6 tsp. wine vinegar
1 c. plus 2 tbsp. oil
6 drops Tabasco sauce
6 drops Worcestershire sauce
3 tbsp. olive oil

Mix in blender and refrigerate. When serving salad add anchovies to salad. Add to taste to salad. Excellent, keeps well.

WOW, that was fast.

Now explain:

Do you coddle the eggs?
Do you add everything at once or do you slowly add oil to running blender?
Why is there 3 Tbsp of oil at the end of the recipe.
Is it red wine vinegar?

Sorry, I'm no expert when it comes to making this.

The recipe I have calls for the 3 tbs olive oil and what I assume to be regular veggie oil... I always use 100% olive. More authentic flavor, I think, and I like that olive taste.

I tend to slowly add the oil, but that's just me, too. White wine vinegar (maybe just a matter of taste?)

I use raw eggs, but it might be safer to coddle them. *shrug*

Sometimes (depending on whether or not people would get weird about anchovies in the salad) I just throw a small amt of them into the blender. Get the flavor, then, without the appearance or necessarily the mouth-feel of them.

Made it last night, excellent. I coddled the eggs, used red wine vinegar and anchovy paste.
