I'm snacking on my frozen pumpkin sandwich. I *LOVE* pumpkin pie. LOVE it.

But, I thought of a lower calorie option that's still pretty good. Take a graham cracker, break in half and put pumpkin pie filling in the middle. Wrap it in aluminum foil and put in the freezer. Only 85-90 calories and yumm-o.

Uggh, you're killin' me! :D Chocolate chip is my favorite. I'm pretty sure I have all the makings in my cupboard right now. Good thing it's too late at night to get started. But wait, I've got the premixed Tollhouse kind in the frig. (NO, you can't! They'll just give ya weird dreams...) Nah, chocolate chip cookies love me. (Not at 12:30 in the morning they don't!)


Ya see what your "harmless" cookie baking has started? :eek: :p

Ummmm... For those of you wanting a much healthier version of chocolate chip cookies, Chris Carmichael has one on his website (I must say even though I don't like Pumpkin I'm sure they'd taste like crunchy, pumpkin scones (YUM!!!) stuffed with chocolate.... mmmmmm chocolate...)

Although that being said, I'm all for enjoying dark chocolate chip cookies in their natural state...

V... what have you started here??? My mouths watering!!!

Since we are moving soon I want to use up as many perishable items as possible. Last night I figured out that if I used all the types of chocolate chips I had in my cupboard I could make a batch of cookies. I combined semi-sweet chunks, semi-sweet chips, semi-sweet mini morsels and milk chocolate chips. The result- heavenly cookies. MMMMM!:D

Double Chocolate Chip Cookies
Cuisine Magazine – Issue #22

Makes 3 dozen cookies
Bake Time: 12 - 14 minutes

Whisk together; set aside

3 ¼ cups all purpose flour
1 t. baking soda
1 t. kosher salt

Cream “Wet” Ingredients with an electric mixer

1 cup sugar
1 cup dark brown sugar
2/3 cup unsalted butter, softened
2/3 cup vegetable shortening
2 eggs
2 t. vanilla

Stir Flour Mixture into the creamed mixture with a spoon. Then stir in:

2 cups semisweet chocolate chips
½ cup milk chocolate chips

Form cookies and bake.


I use Guittard chips only, no Nestle. :p

Velobambina you were SO right about those mini peanut butter cups. They do make a good cookie.

Thom doesn't like peanut butter, so I wouldn't use them except when I'm making cookies to give away.

Hmmm... warm cookies first thing in the morning. :D

I notice that recipe doesn't include nutrition information--you know: fat grams, calories, etc. Probably because there isn't a number big enough.....:eek:

If you break the cookie in half before you eat it, all the calories fall out.

Mmmmmm cookies...

I've been playing with chocolate lately. It's incredible how easy it is to make chocolate truffles and how good they are -- especially when you make them using Valrhona Dark 70% cacao. :D My husband and friends have been enjoying my experimentations. ;)
